Warming Indian Spiced Stew With Flavorful Bison Meat

This simple stew recipe is perfect for when that Indian food craving hits, but you don’t want to make anything complicated. Garam masala is the perfect blend of spices to create that mouth watering, complex flavor. Coconut milk adds an exotic touch, but if you don’t have a can on hand (and I would definitely recommend using the canned kind instead of the kind in a carton) you can just use half and half or milk. Our bison stew meat is a staple in my kitchen because it’s so versatile and easy to cook with. It becomes falling-apart-tender and adds delicious flavor to any stew or curry.

If you’ve never eaten bison before, you’re probably curious what it tastes like. The simple answer is that if you like the flavor of beef, you’re going to absolutely love bison. It’s very similar, but with a slightly sweeter taste. It’s naturally leaner and more tender. It has no “gamey” flavor whatsoever. Ingredients:

  • 2 pounds bison stew meat
  • 2 tablespoons bison tallow, divided
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 large onion, diced
  • 2 tablespoons fresh ginger, minced
  • 4 large cloves of garlic, minced
  • 1 can tomato sauce
  • 1 tablespoon garam masala
  • 1 cup frozen peas
  • 1 cup coconut milk from the can
  • Freshly steamed basmati rice, chopped cilantro and lime wedges for serving

Instructions:



  1. Heat the bison tallow in a large dutch oven over medium heat. When the tallow is shimmering, add in half of the bison stew meat cubes. Sear on all sides, then remove and set aside. Repeat with the remaining pound of stew meat. Season the seared meat with sea salt and freshly ground black pepper.
  2. Add the remaining tablespoon of bison tallow to the dutch oven. Add the onion to the pot and cook for a couple minutes, then add the minced garlic and ginger. Continue cooking until the onions are tender and fragrant. Add the can of tomato sauce and the garam masala powder and stir to combine. Using a wooden spoon, scrape any burned browned bits from the bottom of the pot and incorporate them.
  3. Add the stew meat back into the dutch oven. Bring to a boil, then reduce heat, cover and simmer for 1.5 - 2 hours. The meat should be falling apart tender.
  4. Add the peas and coconut milk to the pot. Continue to cook for a couple minutes until the frozen peas are hot.
  5. Serve over steamed basmati rice (if desired), garnished with chopped cilantro and lime wedges.

Recipe: Sweet Potato Shepherd’s Pie With Lamb & Bison

Shepherd’s pie is a classic English dish that has all of the meaty, starchy goodness that you can expect from a good British meal. It’s comfort food at its finest and couldn’t be more appropriate for a cold, rainy or snowy winter day. The English really know how to do cold weather food right. This updated version uses a combination of traditional lamb and American bison meat. I really love the flavor of combining these two meats, but any combination of our ground selections would be delicious. Usually shepherd’s pie uses regular russet potatoes, but sweet potatoes give a touch of sweet flavor that blends perfectly with the bison meat. Not to mention, the color turns out beautifully. Fresh rosemary really completes this recipe, so be sure not to leave it out if possible.

Why We Choose Lamb Raised In New Zealand


Lambs in New Zealand graze on some of the world’s most lush and nutrient rich pastures. The country enjoys a unique, subtropical climate that encourages animals and plants alike to flourish. New Zealand has some of the best conditions in the world for raising lamb, which might explain why their population outnumbers humans. Cultural traditions in New Zealand make it the industry standard to raise meat humanely and naturally. New Zealand lamb is grass fed throughout its life, unlike American lamb which is often grain finished to encourage larger size and higher body fat percentage. Ingredients:



  • 1 pound ground lamb
  • 1 pound ground bison
  • 3.5 pounds sweet potatoes, diced
  • 1 tablespoon bison tallow
  • 2 medium onions, diced
  • 2 sprigs fresh rosemary
  • 8 oz bag of frozen mixed vegetables
  • 15 oz can of tomato sauce
  • 2 teaspoons garlic powder
  • 4 tablespoons Worcestershire sauce
  • 3 teaspoons sea salt, divided
  • 2 tablespoons butter
  • ½ cup whole milk
  • 1 cup grated sharp cheddar cheese

Recipe Sweet Potato Shepherd’s Pie With Lamb & Bison - Beck & Bulow

Instructions:



  1. Let the thawed ground meat sit out at room temperature for approximately 15 minutes before cooking.
  2. Boil the diced sweet potatoes in salted water until softened.
  3. Meanwhile, heat the tablespoon of bison tallow in a large cast iron skillet over medium heat. Add the diced onions and cook until tender, browned and fragrant.
  4. Add the ground meat to the pan with the onion. Season with two teaspoons of sea salt and all of the garlic powder. Combine, breaking the meat up into small pieces. Cook for approximately 5 more minutes, stirring occasionally.
  5. Add the can of tomato sauce, Worcestershire sauce and the bag of frozen vegetables to the skillet. Turn down the heat and simmer for 12-15 minutes.
  6. When the sweet potatoes are finished cooking, thoroughly drain all of the water from the pot. Add the milk and butter. Season to taste with the remaining sea salt. Blend to your desired consistency for mashed potatoes.
  7. Assemble the shepherd’s pie in a baking dish. Add the meat mixture in first, followed by the potatoes over top. Sprinkle the shredded cheddar cheese on last. Broil the pie for a few minutes until the cheese is melted and golden. Serve and enjoy immediately.

If you’ve never had flautas before, they’re pretty much the same thing as taquitos but usually a little larger. Some say that flautas are made with flour tortillas, while taquitos are made with corn tortillas. Whatever your preference, this recipe will not disappoint. Nothing can compare to fresh, homemade flautas, especially when they’re made with quality meat. I decided to do bison chuck roast and the results were phenomenal. If you don’t have bison tallow on hand for frying, avocado oil is a good substitute. Tallow is incredible for frying because it’s stable at high temperatures and adds excellent flavor, so use it if you can. Serve with your favorite salsa, chopped cilantro and sour cream.

Recipe Homemade Flautas With Shredded Bison Chuck Roast - Beck & Bulow

Ingredients:


(Makes 12 servings)



  • 1 bison or beef chuck roast
  • 3 cloves of garlic, minced
  • 1 large onion, sliced in half
  • 2.5 teaspoons ground cumin
  • 2.5 teaspoons dried oregano
  • 2.5 teaspoon sea salt
  • 2.5 teaspoons freshly ground black pepper
  • 1 ¼ cups chopped roasted green chiles (or canned)
  • 2 cups bison bone broth
  • Bison tallow for frying
  • 24 corn tortillas
  • Salsa, sour cream, avocado, chopped cilantro, shredded lettuce & tomato for serving

Recipe Homemade Flautas With Shredded Bison Chuck Roast - Beck & Bulow

Instructions:



  1. Cook the chuck roast in the Instant Pot along with the garlic, onion, green chiles, sea salt, pepper and bison bone broth. Cook on the high pressure setting for 45 minutes, or until the meat is fork tender.
  2. Remove the roast from the Instant Pot and shred using two forks. Set the meat aside.
  3. Preheat the oven to 200 degrees Fahrenheit.
  4. Warm the tortillas in batches to make them pliable for rolling the flautas.
  5. Working in batches, fill the tortillas with the shredded bison meat. Roll them snugly and use a toothpick to hold them closed. Continue until all of the flautas have been assembled.
  6. Heat bison tallow over medium high heat in a large cast iron skillet, using enough to create 2 inches of melted tallow. When the oil reaches around 375 degrees Fahrenheit, it’s hot enough to fry the flautas. You can use an oil thermometer, or test it by sticking in the end of a wooden spoon or chopstick. If the oil steadily bubbles around the wood, it’s ready. If the bubbles are extremely vigorous, it’s too hot and if there’s just a few bubbles it’s not hot enough.
  7. Fry the flautas, working in batches. Flip halfway through so they turn golden brown all over. Transfer the fried flautas to a surface lined with paper towels, covered to keep warm.
  8. Serve immediately with salsa and sour cream. Enjoy!

It’s easy to make, economical, and very satisfying. It may very well be the simplest option to feed a crowd, and a large pot of stew can provide meals for several days. My favorite way to switch it up with stew is by adding in some flavorful mushrooms. My favorites are shiitake, cremini and button mushrooms but you can use whatever you have on hand. Plenty of herbs and nourishing bison bone broth make this stew super flavorful.

There’s Nothing Like A Good Winter Stew


If you like, you can sear the stew meat first to add even more flavor but it’s not necessary. Stews are extremely versatile and customizing to your preferences is encouraged. I’m fond of adding a splash of apple cider vinegar or balsamic vinegar. I also love adding some spice - red pepper flakes to taste or if you have access to it, New Mexico green chile powder. Finely chopped, roasted green or red chiles would also be delicious. Another thing that always takes stew to the next level is good, crusty bread. Homemade or fresh from a local bakery is always a surefire way to make a stew a complete meal. Toasted and crusty bread is the best for soaking up a hearty stew. Our bison stew meat comes already cut into cubes, making this stew even easier to whip up in no time. If desired, a chopped onion could be a delicious addition.

Ingredients:



  • 2 pounds bison stew meat
  • ¼ cup flour
  • Sea salt & freshly ground black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ¾ cup bison bone broth
  • ¼ cup tomato paste
  • ¼ cup dry red wine
  • 2 teaspoons minced garlic
  • 1 pound potatoes, cut into large chunks
  • ½ pound shiitake, crimini and button mushrooms, sliced in quarters
  • 1 cup roughly chopped parsnips
  • Chopped fresh parsley for garnish

Instructions:



  1. Add the flour, thyme and rosemary to a bowl. Season with sea salt and freshly ground black pepper and whisk to combine thoroughly. Add the stew meat cubes into the bowl and toss to coat thoroughly. Add the whole mixture into an Instant Pot (doesn’t need to be turned on yet).
  2. In a small bowl, stir together the bone broth, red wine, tomato paste and minced garlic. Pour over the meat in the Instant Pot. Add in the chopped vegetables and combine.
  3. Cover and turn on the slow cook function of the Instant Pot for approximately 6 hours (or use the high pressure cook setting for about 25 minutes). Cook until the meat is tender.
  4. Serve garnished with freshly chopped parsley and thick crusty bread.

Recipe: Warming Pumpkin Curry With Bison Sirloin Steak

This warming fall curry recipe is delicious made with either pumpkin or butternut squash, cut into bite sized chunks. Thinly sliced bison sirloin steak cooks quickly and is super tender and flavorful. The richly spiced curry is bursting with flavor and will have you feeling so cozy and satisfied. I recommend enjoying this dish curled up under a cozy blanket watching a heartwarming Christmas movie. Adjust the heat level by seasoning with red pepper flakes to taste, or leaving them out entirely if you prefer. Although any freshly steamed rice will do, jasmine or basmati are my favorites for curries as they’re so aromatic and the subtly sweet flavor goes perfectly with curry spices.

Recipe Warming Pumpkin Curry With Bison Sirloin Steak - Beck & Bulow

Ingredients:



  • Approximately 1lb bison sirloin steak, sliced into thin slices (do this step while the meat is still slightly frozen for best results)
  • 1 tablespoon avocado oil
  • 2 oz red curry paste
  • 2 cups full fat coconut milk (canned), divided
  • 1.5 tablespoons fish sauce
  • 1 teaspoon coconut sugar
  • Pinch paprika
  • ½ fresh lime, juiced
  • Sea salt
  • Crushed red pepper flakes
  • 2.5 cups fresh pumpkin or butternut squash, cubed
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Freshly steamed jasmine or basmati rice for serving
  • Chopped fresh cilantro for garnish

Recipe Warming Pumpkin Curry With Bison Sirloin Steak - Beck & Bulow

Instructions:



  1. Thaw the sirloin steak. While it’s still a bit frozen, slice it thinly. Set aside on a plate at room temperature.
  2. Whisk together the curry paste, avocado oil and 4 tablespoons of the coconut milk. Set aside.
  3. Heat a cast iron skillet over medium heat. When hot, add in the curry & coconut milk mixture. Let it cook for a minute or so until it gets hot and bubbly.
  4. Add the sliced bison sirloin steak into the pan. Saute for about a minute, then add in the rest of the coconut milk, coconut sugar, fish sauce, pinch of paprika, and lime juice. Season with sea salt and crushed red pepper flakes as desired. Combine everything thoroughly, then add the pumpkin or butternut squash and stir again. Reduce the heat to a simmer and cook for approximately 12 minutes or until the squash is tender.
  5. In a small dish, whisk together the cold water and cornstarch. Pour the mixture into the skillet and whisk until the sauce thickens.
  6. Serve the curry over jasmine or basmati rice. Garnish with chopped cilantro and enjoy immediately.

Pot roast is an American classic. Slow braising in the oven turns this otherwise tough cut of meat into a meltingly tender meal with a thick and rich sauce. If you like, substitute some of the bone broth with red wine. Delicious with whatever vegetables you happen to have on hand, although potatoes, parsnips or carrots are the good old fashioned accompaniments. Our grass-fed & finished beef is raised essentially wild on a beautiful 20,000 acre ranch here in New Mexico. The cows roam freely as far as the eye can see with extremely minimal handling. For those familiar with New Mexico, it might sound surprising that there’s so much lush green grass for them to graze on. These fields are naturally irrigated by a sparkling river flowing with ice-melt from the Sangre de Cristo mountains. We started stocking beef due to popular demand from customers who wanted to eat this meat with the knowledge that it’s impeccably sourced.

Many people avoid eating beef because it’s often from industrial feedlots. These factory farming operations are harmful to the environment, the animals and the health of people who consume the meat. When cattle and other grazing animals are raised using sustainable agricultural practices, we can actually repair soil health and restore balance to our ecosystems. The natural rhythms of life provide the soil with everything it needs. All we have to do is stop supporting industrial feedlots and raise meat the way we’re supposed to. That’s why our mission at Beck & Bulow is to steer as many people as possible away from eating factory farmed meat.


Ingredients:



  • 1 bison or grass fed beef chuck roast
  • 2 tablespoons bison tallow
  • Sea salt and freshly ground black pepper
  • Sprigs of rosemary or other herbs
  • 2 large onions, sliced thin
  • 5 cloves of garlic, peeled
  • 1 bay leaf
  • 3.5 cups bone broth
  • 6-8 parsnips, chopped (or whatever vegetables you have on hand)

Old Fashioned Pot Roast For Chilly Weather Comfort - Beck & Bulow

Instructions:



  1. Preheat the oven to 275 degrees Fahrenheit.
  2. Season the roast generously with sea salt and freshly ground black pepper on all sides.
  3. In a large Dutch oven, heat the bison tallow over medium heat. Brown the onions. Remove the onions from the pot and set aside.
  4. Add the chopped parsnips to the pot. Cook for about a minute, stirring frequently, then set aside the parsnips with the onions.
  5. Turn up the heat to medium-high. When shimmering, add a little more tallow to the pot as necessary to brown the roast. When it has a nice sear on all sides, set aside.
  6. Add one cup of bone broth to the dutch oven. Scrape the bottom with a wooden spoon to get all the flavorful browned bits, then whisk into the broth. Add the roast back into the pot. Pour in the remaining bone broth, ensuring that the roast is halfway submerged.
  7. Add the browned onions and parsnips to the pot, along with the sprigs of rosemary.
  8. Roast in the preheated oven for approximately 3 hours, or until it’s so tender that it falls apart when prodded with a fork.

The key to preparing delicious bison is not to overcook it. It always needs to be cooked less than you would typically cook the same cut of beef. When cooked too much, bison will become tough - we always recommend cooking to medium rare for the ultimate flavor and texture. From premium steaks to fajita meat to burgers, any dish you’re used to cooking with beef will be amazing when prepared with bison.

Ingredients:



  • 2 fresh pizza dough circles
  • 3 tablespoons bison tallow, divided (2 tablespoons need to be melted)
  • 2 pounds ground bison
  • 2 cans whole tomatoes, drained
  • 3 cloves of garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 16 oz shredded Italian blend cheese
  • 2 eggs, lightly beaten
  • 1 teaspoon water
  • Marinara sauce for serving

Homemade Pizza Calzones With Ground Bison And Fresh Herbs - Beck & Bulow

Instructions:



  1. Place 2 large baking sheets in the oven before preheating to 450 degrees Fahrenheit. Leave the baking sheets in while the oven heats up.
  2. Lightly flour a surface to place the pizza dough on. Cover the dough with plastic wrap. Leave covered for approximately 20 minutes.
  3. Heat one tablespoon of bison tallow in a large cast iron skillet over medium-high heat. Add the ground bison to the skillet and cook just until brown. Use a wooden spoon to break up the meat into crumbles as it cooks. Take care not to overcook the bison meat.
  4. Stir the tomatoes into the meat, crushing them with the spoon as you do so. Add the minced garlic, basil, parsley, oregano, sea salt and freshly ground pepper to the skillet. Bring the mixture to a boil, then reduce heat and simmer for 8-10 minutes. Take the skillet off the heat and set aside.
  5. Slice each pizza dough round into 4 pieces. Roll each section into its own circle, using a lightly floured surface to work on.
  6. Spread the meat mixture equally inside each calzone. Add ½ cup shredded cheese on top of each.
  7. Make an egg wash by whisking together the egg and water. Brush around the edges of each circle of dough, then fold over in half, pressing the edges together with your fingers or a fork. Brush the tops of the calzones with 2 tablespoons of melted bison tallow.
  8. Place the calzones on 2 sheets of parchment paper. Carefully pull the hot pans out of the oven so they’re accessible. Carefully place the sheets of parchment paper with the unbaked calzone on each baking sheet.
  9. Bake in the preheated oven for approximately 18-20 minutes, until they’re golden brown. Swap the positions of the pans halfway through baking so they spend equal time on the top rack.
  10. Let the calzones rest for five minutes before serving. Enjoy immediately with marinara sauce for dipping.

A Halloween themed dinner can really make things feel festive and these pigs in a blanket are easy and fun to make. You could always make your own biscuit dough if you prefer, but using canned really takes me back to my childhood and makes this recipe incredibly simple to prepare. My personal favorite is the canned croissants or crescent roll dough. The hardest part is probably opening the pressurized can. Does anyone else get nervous doing that? But after all, it’s Halloween, so a little scare will only add to the fun.

Halloween “Mummy” Pigs In A Blanket With Bison Hot Dogs - Beck & Bulow

Ingredients:



  • 8 bison hot dogs
  • 1 can of crescent rolls or approximately 8 oz of homemade biscuit dough
  • 1 egg
  • 2 tablespoons water
  • Mustard
  • Ketchup
  • Hot sauce and any other desired toppings for serving

Instructions:



  1. Preheat the oven to 375 degrees Fahrenheit. Prepare a baking sheet - lining with parchment paper is recommended.
  2. Unroll the canned crescent dough, or prepared biscuit dough. Cut the dough into the thinnest strips possible for mummy wrapping.
  3. Use a paper towel to gently pat the hot dogs dry. This will make a better surface for adhering the “mummy wraps”.
  4. Wrap the strips of dough around the hot dogs to look like a mummy’s bandages. Criss cross them and leave one end open for the “face”. Place them on the prepared baking sheet.
  5. Make an egg wash by whisking together the egg with the two tablespoons of water.
  6. Brush the egg wash onto the dough “bandages”.
  7. Bake for approximately 12-15 minutes, or until the dough is golden brown.
  8. Use ketchup and mustard to make eyes on the faces of the mummies. Serve immediately with desired condiments and enjoy!

Ingredients:


(Serves 4)



  • 1 ½ pounds ground Bison Primal Blend
  • 2 cups shredded Mexican cheese
  • ½ cup Japanese panko bread crumbs
  • 2 tablespoons chopped fresh parsley + extra for garnish
  • 2-3 cloves of garlic, minced
  • 1 jalapeno, finely chopped
  • 1 egg
  • 1.5 teaspoons ground cumin
  • Sea salt & freshly ground black pepper
  • 1 tablespoon bison tallow
  • ½ large yellow onion, chopped
  • 1 can crushed tomatoes
  • 2 tablespoons canned chipotle chiles in adobo

Instructions:



  1. In a medium mixing bowl, combine the Bison Primal Blend, half of the shredded Mexican cheese, panko bread crumbs, 2 tablespoons of chopped parsley, minced garlic, chopped jalapeno, egg and cumin. Season with sea salt and freshly ground black pepper. Mix together just until combined, then shape into meatballs using your hands.
  2. Heat bison tallow in a large cast iron skillet over medium-high heat.
  3. Add the meatballs to the skillet, working in batches if necessary to ensure they are in a single layer. Sear for a total of approximately 3-4 minutes, moving the meatballs around to get an even sear on all sides. Transfer the seared meatballs to a plate and set aside.
  4. Add the chopped onion to the skillet. Cook, stirring frequently, until tender. Add the an of crushed tomatoes and 2 tablespoons of chipotle pepper in adobo sauce to the skillet. Stir to combine and bring to a boil.
  5. Reduce the heat to medium-low and add the meatballs to the skillet. Cover and simmer for approximately 8 minutes, until the meatballs are cooked through. Keep in mind that bison cooks more quickly than beef.
  6. Add the remaining cup of shredded Mexican cheese to the skillet on top of the meatballs. Cover to melt the cheese for a minute or two.
  7. Garnish with the extra chopped parsley. Serve and enjoy immediately.
