Organ meats were prized by ancient cultures for their incredible strengthening and life sustaining nutritive properties. Often saved for leaders, elders and pregnant women these superfoods were revered as vastly beneficial health tonics. Strangely, these nutrient goldmines
are often disregarded by modern day Americans.

For some, incorporating these meats into meals might seem unfamiliar and intimidating. However, it can be easy and delicious to make these meats a regular part of your diet. Here at Beck & Bulow we have been working on providing accessible ways to consume these valuable organ meats, and are excited to debut our signature Power Blend of ground bison with heart, liver and kidney which can be easily made into burgers, tacos, spaghetti and anything else love to cook with ground buffalo.
Heart — The bison heart is an impressive sight to see. This organ is a rich source of folate, iron, selenium and zinc and contains twice the amount of collagen as regular meat. It is the number one food source of copper and provides an abundance of B-complex vitamins including B2, B6 and B12. B-complex vitamins protect us from heart disease, maintain healthy blood pressure, and benefit the brain helping to reduce risk of Alzheimer’s, dementia, anxiety and depression. The heart meat also contains concentrated amounts of an antioxidant known as CoQ10 which is great for heart health, slows down aging and improves energy levels. The bison heart is delicious cooked and eaten like a steak.
Liver — Liver is known as the organ meat with the highest nutrient density, providing a potent amount of vitamin A (beneficial for the eyes and reducing diseases associated with inflammation, such as Alzheimer’s and arthritis), copper, chromium, iron, zinc and folate. It is known to be extremely beneficial for the heart and blood. Bison liver is a great supplement for general energy levels. We love to take it by freezing the liver and cutting it into very small squares that can be swallowed with water each morning. It’s also great as a pate or made into meatballs.
Kidney — The kidney meat is a wealth of omega 3 fatty acids and proteins, brimming with vitamin B12, B6, iron, riboflavin, folate, copper and selenium. The kidney is an amazing source of protein, making it an excellent choice for post-workout fuel. As a key component of the Power Blend, it’s easy to add the benefits of bison kidneys to any meal.
Tongue — Versatile and delectable when slow cooked and made into tacos, soups or sandwiches, the tongue meat is considered to be particularly beneficial for pregnant women and those who are feeling under the weather or recovering from illness. The tongue is loaded with fatty acids and nourishing calories as well as providing high levels of vitamin B12, iron, choline and zinc. Folate is the vitamin found in organ meats which increases fertility and helps to keep babies healthy in utero, preventing birth defects.
