Ingredients:



  • 1 pound ground wild boar
  • ½ cup green onions, finely chopped
  • 3 cloves of garlic, finely minced
  • ½ cup chopped fresh basil
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon red curry paste
  • 1 tablespoon coconut aminos
  • ¼ cup coconut flour
  • Sea salt & freshly ground black pepper

For the coconut curry sauce:

  • 1 tablespoon coconut oil
  • ½ onion, chopped
  • ½ large bell pepper, chopped
  • 1 tablespoon fresh minced ginger
  • 1 tablespoon red curry paste
  • 1 can full fat coconut milk
  • 1 tablespoon coconut aminos
  • Chopped fresh cilantro & lime wedges for garnish

Instructions:



  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, combine the curry paste, garlic, basil, green onions, ginger, coconut flour and coconut aminos. Add in the ground wild boar meat and use your hands to mix just until incorporated.
  3. Form meatballs that are about 1 ½ inches across. Bake in the preheated oven for 20 minutes, or until done all the way through.
  4. Meanwhile, make the coconut curry sauce. Heat the coconut oil in a large cast iron skillet over medium heat. When hot, add in the onion and cook for a couple minutes. Then, add in the bell pepper, minced ginger and minced garlic. Cook until the onion is golden brown and soft. Pour in the can of coconut milk and stir in the curry paste. Simmer for approximately 10 minutes, stirring occasionally and seasoning with sea salt and freshly ground black pepper to taste.
  5. When the meatballs have finished baking, add them back into the skillet with the coconut curry sauce. Cook for a couple minutes together.
  6. Garnish with lime juice and fresh cilantro. Serve immediately and enjoy!

We can barely keep it in stock because it’s so popular. These boars roam the forests of the Southwest, foraging for roots, nuts, berries and tubers. This gives our wild boar meat a nutty, complex flavor profile that has so much depth and dimension compared to conventional pork bacon. Recipe Irish Colcannon Potatoes With Wild Boar Bacon - Beck & Bulow

Ingredients:



  • 1 lb wild boar bacon, cooked and chopped
  • 4 pounds red potatoes, peeled if desired and chopped into quarters
  • 1-2 cups milk, as needed
  • 4 chopped green onions
  • 1 medium head of cabbage, chopped
  • 1 teaspoon garlic powder
  • ¾ teaspoon freshly ground black pepper
  • 4 teaspoons sea salt, divided + more to taste
  • 8 tablespoons butter, divided

Instructions:



  1. Place the quartered potatoes in a large pot, covered with water. Add three teaspoons of sea salt to the water and turn the heat on high to bring the pot to a boil. When it’s boiling, reduce the heat and maintain a gentle boil for approximately 25 minutes or until you can easily pierce the potatoes with a fork. They should be soft, but not falling apart. Remove from the heat and drain. Put the potatoes back in the pot and return to the heat to cook out the moisture for 2-3 minutes. Transfer to a bowl and set aside.
  2. Add ¼ cup butter to the pot and stir in the garlic powder. Cook the chopped cabbage in the butter until tender. Season to taste with sea salt and freshly ground black pepper.
  3. Take the pot of cabbage off of the heat and add in the potatoes. Pour in one cup of milk, the rest of the butter (feel free to add extra butter if desired), and 1 teaspoon salt. Mash the potatoes to your preferred consistency. Add more milk as needed to create the desired thickness.
  4. Season to taste with sea salt and black pepper. Stir in the chopped wild boar bacon and garnish with the green onions to serve.

Extra meatballs can be frozen or used for meal prep, so making a big batch definitely has its perks. I chose to combine elk and wild boar. Wild boar has a higher fat content to balance the lean elk meat, making a tender and juicy meatball with amazing flavor when the two combine. Ingredients:


For the meatballs (this will make extra):



  • 1 lb ground wild boar meat
  • 1 lb ground elk meat
  • ½ cup panko breadcrumbs
  • ⅓ cup milk
  • ½ medium onion, finely diced
  • ½ teaspoon garlic powder
  • 1 egg
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh basil
  • Sea salt and freshly ground black pepper

For the sauce:



  • 1 can diced tomatoes and liquid
  • 1 can tomato paste
  • 1 medium onion, finely diced
  • 1 ¼ teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon basil
  • ¼ teaspoon sea salt
  • 2 cups water

For the ziti:

  • ½ lb ziti pasta, uncooked
  • 1 cup mozzarella cheese
  • Chopped fresh basil for garnish

Instructions:


Note: This will make lots of extra meatballs to freeze or enjoy later. The meatballs can be made in advance if desired, or reduce the recipe. Only ½ lb meatballs total are needed for the baked ziti.



  1. Preheat the oven to 400 degrees
  2. In a large cast iron skillet, sauté the onion over medium heat until translucent, golden brown and flavorful. Set aside to cool slightly. If making the ziti directly following the meatballs, sauté all of the onion for that portion of the recipe as well.
  3. Mix all the ingredients for the meatballs, including the onions, together in a large mixing bowl. Using your hands, mix just until combined.
  4. Form into meatballs, about 1 ½ inches in diameter.
  5. Bake the meatballs in the preheated oven, in batches if necessary. Bake for approximately 20 minutes. Wild boar should always be cooked to an internal temperature of 145 degrees Fahrenheit.

To make the ziti:



  1. Preheat the oven to 400 degrees Fahrenheit. Prepare a lightly greased 8x8 baking dish.
  2. Sauté the onions in a cast iron skillet over medium heat until golden brown and translucent (if this step hasn’t already been completed with the meatballs). Set aside.
  3. Combine the tomatoes, tomato paste and seasonings in a saucepan with the 2 cups of water. Bring to a simmer and cook for approximately 5 minutes. Stir in the cooked onions and remove from heat.
  4. Add one cup of the tomato sauce into the bottom of the baking dish, spreading to make an even layer. Add half of the uncooked ziti pasta in a layer on top, followed by another cup of sauce.
  5. Add meatballs on top, followed by half of the mozzarella cheese. Spread another cup of sauce over the cheese, followed by the rest of the pasta, followed by the rest of the sauce.
  6. Cover with foil and bake for approximately 25 minutes. Remove from the oven, uncover and add the remaining mozzarella cheese on top. Bake, uncovered, for an additional 15 minutes to finish.
  7. Remove from the oven and rest for 15 minutes before serving. Garnish with chopped fresh basil. Enjoy!

Souvlaki is basically like the Greek version of a kebab. It involves giving the meat a lengthy soak in a flavorful marinade and then grilling the tasty chunks on skewers. Then the skewers are served inside pita bread with fresh (or grilled) vegetables and tzatziki sauce drizzled generously over top. Often available as satisfying street food in Greece, souvlaki is portable, quick and delicious. It’s most often served with pork, chicken or beef, but I chose to recreate authentic Greek souvlaki with our wild boar tenderloin. Although you don’t really need to marinate the meat for a full 24 hours, you’ll be glad you did if time permits. However, if you’re making these on the fly and time is short, marinating for 30 minutes or an hour will be just fine.

Lunch Recipe Greek Souvlaki With Wild Boar Tenderloin - Beck & Bulow

Ingredients:



  • 2 lbs wild boar tenderloin, chopped into large cubes
  • 2 tablespoons extra virgin olive oil
  • Juice of one lemon
  • 5 large cloves of garlic, minced
  • 2 tablespoons chopped fresh oregano
  • ¾ teaspoon sea salt
  • ¾ teaspoon freshly ground black pepper
  • ¼ - ½ teaspoon crushed red pepper flakes
  • ¼ cup chopped parsley
  • Pita bread and tzatziki sauce for serving
  • Lemon slices and cherry tomatoes for garnish

Instructions:



  1. Make the marinade for the wild boar tenderloin. Juice the lemon into a small bowl and add in the olive oil, garlic, oregano, crushed red pepper, sea salt and freshly ground black pepper. Whisk together. Add the meat to a shallow baking dish and pour the marinade over the meat so that it’s mostly submerged. Cover and refrigerate overnight, a full 24 hours will give the best flavor.
  2. Preheat the grill to medium-low heat. Skewer the cubes of wild boar meat on wooden skewers that have been soaked in water. Set on a plate.
  3. Grill the meat for approximately 5 minutes on each side. Wild boar tenderloin should always be cooked to an internal temperature of 145 degrees Fahrenheit.
  4. Serve the cooked meat with warm pita bread. Garnish with chopped parsley, lemon, halved cherry tomatoes and tzatziki sauce drizzled over top.

Osso buco is a great choice for even the most inexperienced cooks. It’s virtually impossible to mess up. The longer you cook it, the more tender it gets. The flavor is incredible. Being in the slow cooker category of cuts of meat, osso buco, or leg shank, comes from muscles that get a lot of use. This means that the meat is incredibly flavorful but quite tough - that is, until it’s slow cooked to tender perfection. If it’s not so tender it’s falling apart when you check for doneness, simply cook it longer. The flavors meld together beautifully in the dutch oven (you could also make this in an Instant Pot or crock pot). Since the leg shank is cut horizontally across the bone, there’s even more complex and rich flavor added from the melted bone marrow.

Ingredients:



  • 3-4 lbs wild boar osso buco
  • ¼ cup flour for dredging
  • 4 tablespoons bison tallow, divided
  • Sea salt and freshly ground black pepper to taste
  • 1 small onion, finely chopped
  • ½ cup finely chopped parsnip
  • 3 large cloves of garlic, finely minced
  • 1 cup red wine
  • 2 cups bison bone broth
  • 1 28 oz can of tomatoes
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 2 bay leaves
  • 2 tablespoons double concentrated tomato paste
  • Zest of one lemon

Instructions:



  1. Preheat the oven to 325 degrees Fahrenheit. Let the wild boar shanks sit out for approximately 15 minute at room temperature before cooking.
  2. Season the osso buco generously on both sides with sea salt and freshly ground black pepper. Dredge them in the flour, shake off the excess and set aside.
  3. Heat 2 tablespoons of bison tallow in a large dutch oven over medium-high heat. Sear the wild boar shanks, forming a flavorful crust on each side (work in batches if necessary). Set the seared shanks aside on a plate.
  4. Reduce the heat to medium and add the rest of the bison tallow to the dutch oven. Cook the chopped parsnips, onion and garlic until tender.
  5. Add the red wine to the pot and cook for a few more minutes. Add the can of tomatoes, crushing them with a wooden spoon or your hands, and one cup of bison bone broth. Then add the herbs, tomato paste and lemon zest. Stir to combine and cook for approximately 5 minutes.
  6. Add the seared wild boar shanks back into the pot. Nestle them in so they are mostly covered by the sauce. If necessary, you can add more bone broth to create more liquid.
  7. Put the lid on the dutch oven and cook in the preheated oven for 2 ½ hours, or until the meat is fork tender. Check halfway through to see if more liquid needs to be added. Serve over mashed potatoes if desired. Enjoy!

Super Quick & Easy Lasagna With Bison And Wild Boar

Lasagna is definitely one of my favorite foods, but I hardly ever make it because it’s time consuming. This recipe is the perfect easy, quick way to make lasagna - the secret is using pre made cheese raviolis instead of layers of lasagna noodles. I like to use a combination of ground bison and ground wild boar meat. The flavors are so good together and the fattier wild boar perfectly complements the lean and tender bison meat. You can whip this up as a quick dinner and enjoy the delicious results in about an hour total (and around 40 minutes are hands off time in the oven). If you don’t have bison broth on hand, just substitute water. It’ll still turn out delicious!

  • 1 pound ground bison
  • 1 pound ground wild boar
  • 1 ¼ tablespoons minced garlic
  • ¾ teaspoon sea salt
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon freshly ground black pepper
  • 1 jar preferred pasta sauce
  • 1 ¾ cups bison bone broth
  • 1 package pre-made cheese ravioli
  • 1 ¼ cup shredded Italian cheese

Instructions:



  • Preheat the oven to 400 degrees Fahrenheit. Prepare a 9x13 glass baking dish and set aside.
  • Heat a large cast iron skillet over medium heat. When hot, add in the ground bison, ground wild boar and minced garlic. Cook for approximately 8 minutes, breaking the ground meat apart into crumbles as it cooks. Pour off the fat and return the meat to the skillet.
  • Add the sea salt, freshly ground black pepper and nutmeg to the cooked meat. Stir to combine, then pour in the jar of pasta sauce along with the 1 ¾ cups bone broth. Bring to a boil and cook for 1-2 minutes.
  • Add a layer of cheese ravioli to the bottom of the glass baking pan. Add in half the meat mixture and sprinkle on half of the cheese. Add another layer of ravioli and repeat. Cover the dish tightly with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and continue to bake for approximately 20 more minutes, or until the ravioli is cooked through.
  • Let rest for 5-10 minutes before serving. Serve garnished with chopped fresh basil if desired.

Ingredients:



  • Approximately 2 lbs wild boar shoulder roast
  • 3 tablespoons bison tallow or avocado oil
  • 1 large onion, diced
  • 2 large cloves of garlic, crushed and peeled
  • 2 parsnips, diced
  • 2 cups dry red wine
  • 28 oz can of crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon oregano
  • 2 tablespoons sea salt, divided
  • 2 tablespoons black pepper, divided
  • ½ cup bison bone broth
  • 2 bay leaves
  • 16 oz pappardelle pasta, cooked
  • Grated Parmesan cheese & chopped fresh basil for serving

Traditional Italian Ragu With Shredded Wild Boar Shoulder - Beck & Bulow

Instructions:



  1. Let the thawed wild boar shoulder sit at room temperature for approximately 15 minutes before cooking. Cut it into strips about 1-2 inches in size. Season the meat on all sides with half of the salt and pepper.
  2. Heat 1 tablespoon of bison tallow or avocado oil in a large dutch oven over medium high heat. Sear the meat in batches. When all the meat is browned, remove from the heat and set aside.
  3. Add the rest of the bison tallow or avocado oil to the pot and reduce the heat to medium. Cook the onions for a minute or two, then add in the garlic and parsnips. Cook until tender.
  4. Pour half of the red wine into the pot. Stir with a wooden spoon, scraping along the bottom to incorporate any flavorful browned bits. Pour in the rest of the wine along with the can of crushed tomatoes, tomato paste, dried oregano, bay leaves, and bison bone broth. Season with the remaining salt and pepper. Add in the browned wild boar meat. Stir to combine. Reduce to a simmer and cover. Cook for approximately 2 hours, stirring occasionally.
  5. When the meat is finished cooking it should be fork tender. Remove the meat from the pot and shred, then put it back in and stir to combine.
  6. Cover and cook for 10-15 more minutes. Season with more salt and pepper to taste.
  7. Serve over top of the cooked pasta, garnished with Parmesan & chopped fresh basil. Enjoy!

  • 3 large cloves of garlic, minced
  • 2 pounds black eyed peas (frozen is fine)
  • 4 cups bison bone broth
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon cajun seasoning
  • ½ cup chopped scallions
  • 2 cups wild rice

Instructions:



  1. Cook the rice according to package instructions. Set aside.
  2. Heat a large cast iron skillet over medium heat. Cook the chopped bacon, stirring occasionally. Add in the sliced bison sausage. Cook until browned and slightly crispy. Set aside.
  3. Add the onion, red bell pepper, jalapeno, garlic and celery to the skillet. Cook, stirring frequently for approximately 5 minutes until tender.
  4. Add the black eyed peas, bison bone broth, chopped fresh thyme and cajun seasoning to the skillet. Cover and simmer for approximately 30 minutes or until the peas are softened. Add more liquid if necessary. Season to taste with sea salt and freshly ground black pepper.
  5. Combine the sausage and bacon with the black eyed pea mixture. Serve over the cooked rice and garnish with chopped scallions. Enjoy!

Meatloaf is quick to prepare, but can take up to an hour to cook in the oven. Luckily, there is a way to prepare this meal during the day and have it ready right when you get home from work. If you have a slow cooker or Instant Pot, you can cook your meatloaf while you’re away from home and simply finish it with a few minutes under the broiler right before serving. This recipe uses bison and wild boar, which is my favorite combination for meatloaf. The fattier wild boar meat balances well with the lean bison and the flavors of both are excellent.

  • 1 pound ground bison
  • 1 pound ground wild boar
  • 1 large onion, finely diced
  • 12 oz herbed bread crumbs
  • Approximately 1.5 cups milk, as needed
  • 2 eggs
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup ketchup
  • ½ cup barbecue sauce of choice
  • 2 tablespoons coconut sugar (optional, depending on the sweetness of your ketchup and barbecue sauce)
  • 1 tablespoon mustard
  • 2 teaspoons apple cider vinegar
  • Freshly ground black pepper to taste

How To Make Meatloaf In A Slow Cooker Or Instant Pot - Beck & Bulow

Instructions:



  1. Use heavy duty aluminum foil to line the crock pot, making sure it also covers two of the sides (this will allow you to remove the whole thing later and finish under the broiler). Lightly grease the foil.
  2. Before cooking, let the ground meat sit out at room temperature for approximately 15 minutes.
  3. Meanwhile, heat a cast iron skillet over medium heat with a little bison tallow or avocado oil. Add in the diced onion and cook slowly, stirring often, until it becomes golden brown, tender and fragrant. Set aside to cool.
  4. In a large mixing bowl, combine the ground bison, ground wild boar, bread crumbs, cooked onion, milk, eggs, sea salt and freshly ground black pepper. Using your hands, mix together just until combined. Take care not to overmix as it can cause the meat to become tough.
  5. In a small bowl, whisk together the ketchup, barbecue sauce, coconut sugar, mustard, apple cider vinegar. Season with freshly ground black pepper to taste. Set aside.
  6. Shape the meat mixture into a loaf and add it into the prepared crock pot. Pour ½ of the ketchup mixture over top. Put the lid on the crock pot and cook on low for approximately 6 hours. If using an Instant Pot, turn on the Slow Cook function and plan for a slightly longer cooking time (check after 6.5 hours).
  7. When the meatloaf has finished cooking, remove it from the pot using the foil liner. Put it on a baking sheet, then pour more of the sauce over top. Reserve some of the sauce for serving.
  8. Broil for 3-4 minutes, or until it’s hot with a sticky, shiny appearance.
  9. Serve and enjoy with more sauce over the top as desired.

  • 1 onion, chopped
  • 2 teaspoons finely minced fresh sage leaves
  • Sea salt
  • Red pepper flakes
  • 2 tablespoons butter
  • 4 large shallots, finely chopped
  • 12 oz dried bread cubes, or equivalent amount of chopped dried bread
  • 2 ½ cups bison bone broth
  • 2 cups diced green apples
  • 1 cup dried cranberries

Instructions:



  1. Let the ground wild boar meat come to room temperature for 15-20 minutes before cooking.
  2. In a large mixing bowl, combine the meat with the garlic powder, onion powder, about ½ teaspoon of minced sage, along with about ½ teaspoon sea salt and red pepper flakes to taste. Mix just until combined, using your hands.
  3. In a large cast iron skillet, heat a little bison tallow or avocado oil until hot. Add in the ground wild boar mixture and cook for approximately 8 minutes until browned. Break the meat apart with a wooden spoon while cooking. Set the cooked meat mixture aside in a large bowl.
  4. Preheat the oven to 350 degrees Fahrenheit. Add the two tablespoons of butter to the cast iron skillet. Add the minced shallots and cook until fragrant and tender. Add the cooked shallots into the meat mixture and combine. Then mix in the chopped dried bread, bison bone broth, diced apples, cranberries, garlic powder, the remaining onion powder and sage, and about a teaspoon of sea salt.
  5. Grease a baking dish. Place the stuffing mixture in the dish and loosely cover with foil. Bake in the preheated oven for approximately 30 minutes, or until heated completely through. Serve and enjoy!

Super Quick Teriyaki Glazed Wild Boar Tenderloin Recipe - Beck & Bulow

Ingredients:



  • 2 wild boar tenderloins
  • ½ teaspoon Dijon mustard
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 1 inch fresh ginger, grated or minced
  • 1 tablespoon coconut sugar
  • 2 tablespoons avocado oil
  • 1 tablespoon bison tallow
  • Chopped green onions for garnish if desired
  • Sea salt and freshly ground black pepper to taste

Instructions:



  1. In a medium mixing bowl, whisk together the soy sauce, Dijon mustard, balsamic vinegar, avocado oil and coconut sugar. Set aside. Preheat the oven to 400 degrees Fahrenheit.
  2. Season the wild boar tenderloins all over with sea salt and freshly ground black pepper. Coat thoroughly in the reserved sauce. Shake gently to remove excess and set aside on a plate.
  3. Add the tablespoon of bison tallow to a large cast iron skillet over medium-high heat. When the oil is shimmering, add in the tenderloins and brown on all sides. Remove from the heat.
  4. Add the remaining sauce on top of the wild boar tenderloins. Place the cast iron skillet in the oven and bake for approximately 15 minutes, or until the meat reaches an internal temperature of 155 degrees Fahrenheit.
  5. Allow the tenderloins to rest for approximately five minutes before slicing and serving. Spoon the rest of the sauce from the skillet over top and garnish with chopped green onions. Enjoy immediately.

Instructions:



  • 1 pound ground bison
  • 1 pound ground wild boar
  • ¼ cup milk
  • 1 tablespoon Worcestershire sauce
  • ½ cup Japanese panko breadcrumbs
  • 1 ½ tablespoons bison tallow
  • 1 ½ medium yellow onions, diced
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 3-4 cloves of garlic, minced
  • ¼ cup barbecue sauce
  • 1.5 tablespoons ketchup

Instructions:



  1. Place a rack in the center of the oven. Preheat to 350 degrees Fahrenheit.
  2. In a large mixing bowl, whisk together the eggs, milk and tablespoon of Worcestershire sauce. When combined, add the panko bread crumbs to the mix and stir until they’ve soaked in some of the liquid. Set the mixture aside.
  3. Heat the bison tallow in a large cast iron skillet over medium heat. When the oil is shimmering, add in the diced onion. Season with sea salt and freshly ground black pepper. Cook until the onions are tender and golden brown. Add in the minced garlic and cook for approximately one minute. Set the cooked onion and garlic mixture aside and allow to cool for a few minutes.
  4. Stir the slightly cooled onion and garlic mixture into the bowl with the egg, milk and bread crumb mixture. Combine. Add the ground bison and ground wild boar. Use your fingers to gently mix just until completely combined.
  5. Add the meatloaf mixture to the cast iron skillet. Press it evenly into the skillet.
  6. Bake for approximately 20 to 25 minutes. The meat should reach an internal temperature of 165 degrees Fahrenheit when measured with a meat thermometer. Ensure that it’s cooked all the way through but not overcooked.
  7. Take the skillet out of the oven and turn on the broiler. Mix the barbecue sauce and ketchup together in a small bowl. Brush the mixture over the top of the meatloaf. Place the skillet back in the oven and broil for approximately 3 minutes. Take it out of the oven when finished cooking and let cool for 10 minutes before serving.
