Recipe: Wild Boar, Tart Apple & Cranberry Stuffing

This wild boar stuffing is what wintertime dreams are made of. The sweet tart combination of crisp green apples and dried cranberries make this seasonal delight a total crowd pleaser. Our ground wild boar has an amazing, complex flavor profile that I love using in a huge variety of recipes. This stuffing is super easy to make and is the perfect accompaniment to any dinner, but fancy enough for Christmas dinner or any other special wintertime occasion. It would also go great with any of our other ground meats, although personally I particularly love it with wild boar.

Our Southwestern wild boar roam the forests, foraging their natural diet. They love to eat berries, nuts, roots and tubers which give their meat its unique and delectable flavor profile. They’re trapped under the supervision of specialized veterinarians and butchered by a small scale, species specific facility. Just like all of our products, we care about where this meat comes from. Wild boar are actually an invasive species to North America, and their population continues to grow. They ruin crops and disrupt the growth of endangered plants in forests by digging in the soil. When we eat humanely trapped wild boar meat it helps to protect our food supply and forest ecosystems.

Recipe Wild Boar, Tart Apple & Cranberry Stuffing - Beck & Bulow

Ingredients:



  • 1 pound ground wild boar
  • 2 teaspoons garlic powder
  • 1 onion, chopped
  • 2 teaspoons finely minced fresh sage leaves
  • Sea salt
  • Red pepper flakes
  • 2 tablespoons butter
  • 4 large shallots, finely chopped
  • 12 oz dried bread cubes, or equivalent amount of chopped dried bread
  • 2 ½ cups bison bone broth
  • 2 cups diced green apples
  • 1 cup dried cranberries

Instructions:



  1. Let the ground wild boar meat come to room temperature for 15-20 minutes before cooking.
  2. In a large mixing bowl, combine the meat with the garlic powder, onion powder, about ½ teaspoon of minced sage, along with about ½ teaspoon sea salt and red pepper flakes to taste. Mix just until combined, using your hands.
  3. In a large cast iron skillet, heat a little bison tallow or avocado oil until hot. Add in the ground wild boar mixture and cook for approximately 8 minutes until browned. Break the meat apart with a wooden spoon while cooking. Set the cooked meat mixture aside in a large bowl.
  4. Preheat the oven to 350 degrees Fahrenheit. Add the two tablespoons of butter to the cast iron skillet. Add the minced shallots and cook until fragrant and tender. Add the cooked shallots into the meat mixture and combine. Then mix in the chopped dried bread, bison bone broth, diced apples, cranberries, garlic powder, the remaining onion powder and sage, and about a teaspoon of sea salt.
  5. Grease a baking dish. Place the stuffing mixture in the dish and loosely cover with foil. Bake in the preheated oven for approximately 30 minutes, or until heated completely through. Serve and enjoy!

In my opinion, homemade spaghetti basically requires making meatballs. Okay, yes, it’s still delicious even if you just put ground meat in the sauce. But there’s just something about meatballs that makes spaghetti so incredibly good. Whenever I make something that involves ground meat, I love experimenting with different combinations of our ground selections. Bison and wild boar is one of my all-time favorite duos, and once you try it out you’ll know why. Treat yourself and your family and make this for dinner - it’ll be one of your new favorite recipes.

Homemade Spaghetti With Bison & Wild Boar Meatballs - Beck & Bulow

Ingredients:



  • 3 slices of bread torn into small pieces (cut the crusts off first)
  • ⅔ cup cold water
  • 1 lb ground bison meat
  • 1 lb ground wild boar meat
  • ¼ cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 legg
  • ¾ cup flour
  • bison tallow or avocado oil as needed for cooking
  • 28 oz spaghetti sauce, store bought or homemade
  • 1 lb spaghetti noodles
  • 2 bay leaves if desired
  • Fresh basil leaves

Instructions:



  1. Place the pieces of crustless bread in a bowl, then pour the ⅔ cup cold water over top. Let it sit for a few minutes to absorb and get soft. Then mash with a fork and set aside.
  2. Place the (completely thawed) ground bison and ground wild boar in a large mixing bowl. Use a wooden spoon to break the meat up into pieces. Add in the ¼ cup of grated parmesan cheese, minced garlic, egg, sea salt and freshly ground black pepper. Mix just until combined.
  3. Place the ¾ cup flour into a shallow bowl or baking dish and set aside.
  4. Form the mixture into meatballs (aim for about 1.5 inches in diameter). Coat the meatballs in flour, gently shaking off the excess. Set the flour coated meatballs aside on a plate.
  5. Heat bison tallow or avocado oil in a dutch oven over medium heat. Cook the meatballs in batches until they’re golden brown all over. They will cook all the way through later in the sauce. Set the browned meatballs aside.
  6. If desired, brown onions at this stage to add into your sauce.
  7. Add the tomato sauce to the dutch oven along with the bay leaves if using. Cook until boiling, then add in the meatballs. Cover halfway and cook at a simmer for about 30 minutes, stirring the meatballs occasionally.
  8. In the last five minutes, add in fresh basil, sea salt and freshly ground black pepper to taste. Meatballs should be cooked all the way through and tender. Remove from heat and cover to keep warm.
  9. Cook the spaghetti noodles according to the instructions on the package. Drain, then put the spaghetti back in the pot and pour the sauce and meatballs over the top. Toss to combine.
  10. To serve, garnish with grated parmesan cheese and fresh basil as desired.
