These colcannon potatoes are mashed potatoes taken to the next level with mouthwatering bacon and garlicky cabbage whipped in. Aside from making it a more nutritionally well-rounded dish, the combination is downright delicious. Colcannon has a long history in Ireland, and was traditionally served on Halloween. Legend has it that there were hidden trinkets inside the potatoes to tell your fortune - often thought to predict marriage and other life events.

This gives our wild boar meat a nutty, complex flavor profile that has so much depth and dimension compared to conventional pork bacon. It’s also slightly less greasy than conventional bacon and contains more vitamins and minerals. It’s more delicious, healthier and on top of that it’s one of the most sustainable meats you can eat.


A Delicious & Sustainable Meat Choice


These wild boar are trapped under the supervision of specialized veterinarians and butchered by small-scale master butchers. Wild boar are actually an invasive species to North America, and their population continues to grow. They were brought to the New World by European colonists who wanted to have them available for hunting purposes. However, since wild boar are not native to North America, they are disruptive to our ecosystems. They ruin crops and prevent the growth of endangered plants in forests by digging in the soil. When we eat humanely trapped wild boar meat it helps to protect our food supply and forest ecosystems.

Recipe Irish Colcannon Potatoes With Wild Boar Bacon - Beck & Bulow

Ingredients:



  • 1 lb wild boar bacon, cooked and chopped
  • 4 pounds red potatoes, peeled if desired and chopped into quarters
  • 1-2 cups milk, as needed
  • 4 chopped green onions
  • 1 medium head of cabbage, chopped
  • 1 teaspoon garlic powder
  • ¾ teaspoon freshly ground black pepper
  • 4 teaspoons sea salt, divided + more to taste
  • 8 tablespoons butter, divided

Instructions:



  1. Place the quartered potatoes in a large pot, covered with water. Add three teaspoons of sea salt to the water and turn the heat on high to bring the pot to a boil. When it’s boiling, reduce the heat and maintain a gentle boil for approximately 25 minutes or until you can easily pierce the potatoes with a fork. They should be soft, but not falling apart. Remove from the heat and drain. Put the potatoes back in the pot and return to the heat to cook out the moisture for 2-3 minutes. Transfer to a bowl and set aside.
  2. Add ¼ cup butter to the pot and stir in the garlic powder. Cook the chopped cabbage in the butter until tender. Season to taste with sea salt and freshly ground black pepper.
  3. Take the pot of cabbage off of the heat and add in the potatoes. Pour in one cup of milk, the rest of the butter (feel free to add extra butter if desired), and 1 teaspoon salt. Mash the potatoes to your preferred consistency. Add more milk as needed to create the desired thickness.
  4. Season to taste with sea salt and black pepper. Stir in the chopped wild boar bacon and garnish with the green onions to serve.
