Wild boar is my first choice for meatballs - if I use another meat, I always mix half and half with wild boar. The reason is because it makes the meatballs moist, tender and flavorful. This fresh and satisfying meal is anything but boring yet simple and quick to prepare.

Recipe Thai Wild Boar Meatballs With Coconut Curry Sauce - Beck & Bulow

Ingredients:



  • 1 pound ground wild boar
  • ½ cup green onions, finely chopped
  • 3 cloves of garlic, finely minced
  • ½ cup chopped fresh basil
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon red curry paste
  • 1 tablespoon coconut aminos
  • ¼ cup coconut flour
  • Sea salt & freshly ground black pepper

For the coconut curry sauce:

  • 1 tablespoon coconut oil
  • ½ onion, chopped
  • ½ large bell pepper, chopped
  • 1 tablespoon fresh minced ginger
  • 1 tablespoon red curry paste
  • 1 can full fat coconut milk
  • 1 tablespoon coconut aminos
  • Chopped fresh cilantro & lime wedges for garnish

Instructions:



  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, combine the curry paste, garlic, basil, green onions, ginger, coconut flour and coconut aminos. Add in the ground wild boar meat and use your hands to mix just until incorporated.
  3. Form meatballs that are about 1 ½ inches across. Bake in the preheated oven for 20 minutes, or until done all the way through.
  4. Meanwhile, make the coconut curry sauce. Heat the coconut oil in a large cast iron skillet over medium heat. When hot, add in the onion and cook for a couple minutes. Then, add in the bell pepper, minced ginger and minced garlic. Cook until the onion is golden brown and soft. Pour in the can of coconut milk and stir in the curry paste. Simmer for approximately 10 minutes, stirring occasionally and seasoning with sea salt and freshly ground black pepper to taste.
  5. When the meatballs have finished baking, add them back into the skillet with the coconut curry sauce. Cook for a couple minutes together.
  6. Garnish with lime juice and fresh cilantro. Serve immediately and enjoy!
