Waterzooi is a traditional Belgian soup that’s soothing, hearty and delicious. The name comes from the Flemish words for boiling water - a fitting name for a stew! This dish is usually made with chicken or fish. When cooked with chicken, it tastes a little like the Belgian version of chicken and dumplings. This soup is creamy, flavorful and satisfying. It dates all the way back to the Middle Ages, so it certainly has withstood the test of time. I used bone-in chicken thighs, but you could also make this with boneless chicken breast - just reduce the amount of cooking time for the chicken.

Ingredients:
- 3 pounds chicken thighs
- 1 pound parsnips, chopped
- 2 leeks, sliced thin
- 3 carrots, chopped
- 2 ribs of celery, chopped
- 1 large onion, chopped
- 2 shallots, minced
- ⅓ cup heavy whipping cream
- 2 tablespoons butter
- 2 egg yolks
- Chopped fresh parsley
- 1 lemon
- 4 cups chicken broth
- Sea salt & freshly ground black pepper

Instructions:
- Season the chicken on all sides with sea salt and freshly ground black pepper.
- Melt the two tablespoons of butter in a large Dutch oven over medium-high heat. Add in the minced shallots, chopped leeks, onions, celery, parsnips and carrots. Arrange the seasoned chicken thighs on top of the vegetables. Pour in the chicken broth, adding more if necessary to completely submerge the chicken. Season as desired with sea salt and freshly ground black pepper.
- Bring the pot to a boil, then reduce heat, cover and simmer for 2-3 hours, or until the chicken is fork tender. Remove the chicken from the pot with tongs or a slotted spoon and set aside to cool. Continue to simmer the soup for another half hour.
- When the chicken is cool enough to handle, shred the meat into large chunks and discard the bones. Set the shredded chicken aside.
- While the soup is simmering, beat the egg yolks and heavy cream together in a bowl. Gradually whisk the mixture into the soup.
- Juice the lemon into the pot and stir in the chopped parsley. Add the shredded chicken back into the soup and stir to combine.
- Serve and enjoy!

They turn out juicy, tender and absolutely delicious every single time I cook with them. This Mediterranean style orzo dish is made in the Instant Pot in mere minutes and has all of the flavor and nutrition I’m looking for in a quick and tasty lunch or dinner recipe. If you can’t find feta cheese stuffed olives, use whatever olives you can find and add in some feta cheese separately. Or you can leave it out completely… but who doesn’t love feta cheese? I recommend getting the goat milk variety for the best flavor. The herbes de Provence seasoning is one of my favorites to use on poultry and fish. It’s generally known as a French seasoning but it has all of the right elements for Mediterranean cooking, too. You can easily find it at any grocery store, or make your own.

Ingredients:
- 2 pounds boneless, skinless chicken breasts, chopped into bite-sized pieces
- 2 cups chicken broth or water
- 2 heirloom tomatoes, chopped
- 1 ½ cups feta cheese stuffed olives, sliced in half
- ½ cup capers
- 1 yellow squash, chopped
- 1 red onion, diced
- Juice of ½ lemon, zest of one whole lemon
- 2 tablespoons olive oil
- 1 tablespoon herbes de Provence seasoning
- Fresh chopped parsley for garnish
- 1 cup orzo pasta (uncooked)

Instructions:
- Add all of the ingredients except the orzo and parsley into the Instant Pot and combine. Secure the lid on the Instant Pot and make sure the pressure valve is sealed. Cook on the high pressure setting for 8 minutes, then carefully release the pressure valve.
- Once the pressure has finished releasing, remove the lid and add in the uncooked orzo pasta. Secure the lid and pressure valve once more. Cook on the low pressure setting for 3 minutes, then release the pressure. Cool with the lid off for 10 minutes before serving.
- Garnish with chopped parsley and a drizzle of olive oil. Serve and enjoy immediately!

Aji de gallina is everything you could ever want in a comfort food. It’s delicious, warming, soothing and better yet, it’s pretty healthy, too. The sauce is incredibly satisfying and creamy, blended with walnuts and milk soaked bread to create an irresistible consistency and nutty flavor. The mild yellow aji chili adds the perfect amount of kick to this recipe. You can probably find aji amarillo paste if you have an international market nearby, but if not, habaneros will make a delicious substitute. Ingredients:
- 3 yellow potatoes, boiled and sliced in half
- 2 lbs chicken breast, thawed
- 3 slices of bread with the crust cut off
- ½ cup milk
- 2 cups chicken stock
- 1.5 tablespoons aji amarillo chili paste
- 2 tablespoons avocado oil
- 2 cloves of garlic, minced
- 2 small yellow onions, finely diced
- ¼ cup chopped walnuts
- ¼ cup grated Parmesan cheese
- 3 cups cooked white rice
- 3 hard boiled eggs, halved
- 6 black olives, halved

Instructions:
- If the potatoes haven’t been prepared by boiling until fork tender, do so now. Slice in half and set aside, covered to keep warm. Season lightly with sea salt.
- Soak the bread in a shallow dish or bowl with the ½ cup milk. Set aside.
- In a large pot over medium high heat, boil the chicken breasts in salted water for approximately 12 minutes, or just until cooked all the way through (the juices will run clear). Let the chicken cool until it’s cool enough to handle. Shred the chicken using two forks or your fingers.
- Heat the avocado oil in a large cast iron skillet over medium heat. When hot, stir in the aji amarillo paste. Add the onion to the pan and cook for a couple minutes, then add in the garlic. Cook, stirring frequently, until fragrant and tender. Remove from the heat and set aside.
- Add the milk soaked bread, walnuts and Parmesan cheese to a high speed blender. Blend until smooth. Then, pour in the aji amarillo, onion and garlic mixture from the pan. Pulse until incorporated.
- Pour the mixture into the skillet and cook with 1 cup of chicken broth. Bring to a simmer and stir in the shredded chicken. Add more chicken broth until the desired consistency is reached.
- Serve the chicken over top of a halved boil potato. Add a scoop of rice on the side. Garnish with half of a hard boiled egg and black olives. Serve immediately and enjoy!

- 1 pound chicken breasts, thawed

- ¼ teaspoon water
- ½ cup Japanese panko bread crumbs
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder

- ¼ teaspoon dried basil
- ¼ teaspoon sea salt

Instructions:
- Preheat the oven to 400 degrees Fahrenheit. Prepare a baking sheet, lightly greased or lined with parchment paper if desired. Set aside.
- In a medium mixing bowl, combine the panko breadcrumbs, Italian seasoning, garlic powder, oregano, sea salt and mozzarella cheese. Set aside.
- In a smaller bowl, lightly whisk the egg and ¼ teaspoon of water together.
- Gently pat the chicken breast dry with paper towels. Cut into bite sized chunks.
- Working in batches, coat the chicken bites thoroughly in the lightly whisked egg. Then, dredge in the spice mixture and coat evenly on all sides. Place on the reserved baking sheet.
- Bake in the preheated oven for approximately 25-30 minutes, flipping once halfway through. The chicken nuggets should be golden, crispy and cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
- When finished cooking, remove from the oven and let the chicken nuggets rest for about five minutes. Enjoy immediately with marinara sauce or any other dipping sauce you prefer.

- 2 avocados, cut in half

- 2 red onions, peeled and sliced
- 4 green onions, sliced
- 1 green bell pepper, sliced
- 3 tablespoons lime juice
- 1 tablespoon Bragg’s Liquid Aminos
- Chopped cilantro and lime wedges for garnish
- Red pepper flakes

Instructions:
- Set the chicken thighs out at room temperature for about 20 minutes. This will help them to cook more evenly.
- Preheat the oven to 450 degrees Fahrenheit.
- Heat the avocado oil in a cast iron skillet over medium-high heat.
- Season the chicken thighs with sea salt, freshly ground black pepper and green chile powder on all sides.
- When the oil is hot, add the chicken thighs to the pan and cook for 12 minutes, then flip and cook for another 10 minutes.
- Wipe out the skillet. Sprinkle the coconut sugar on top of the avocado halves, then place them in the hot pan facing down. Cook for about 2 minutes. Remove from the pan and set aside.
- Adding more oil to the pan if necessary, cook the red onions for approximately 3 minutes. Add in the green onions and bell pepper. Cook for another few minutes. Add in the lime juice and Bragg’s Liquid Aminos. Stir to combine.
- Place the chicken thighs and avocados back into the skillet. Bake in the oven for about 7 minutes or until the chicken is cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
- Season with more sea salt and freshly ground black pepper if desired. Garnish with cilantro and limes. Serve and enjoy!
