Lighting Fast Instant Pot Mediterranean Orzo With Chicken

Sometimes chicken breast gets a reputation for being dry or boring, but I’ve found that with ours, nothing could be further from the truth. They turn out juicy, tender and absolutely delicious every single time I cook with them. This Mediterranean style orzo dish is made in the Instant Pot in mere minutes and has all of the flavor and nutrition I’m looking for in a quick and tasty lunch or dinner recipe. If you can’t find feta cheese stuffed olives, use whatever olives you can find and add in some feta cheese separately. Or you can leave it out completely… but who doesn’t love feta cheese? I recommend getting the goat milk variety for the best flavor. The herbes de Provence seasoning is one of my favorites to use on poultry and fish. It’s generally known as a French seasoning but it has all of the right elements for Mediterranean cooking, too. You can easily find it at any grocery store, or make your own.

Lighting Fast Instant Pot Mediterranean Orzo With Chicken - Beck & Bulow

Ingredients:



  • 2 pounds boneless, skinless chicken breasts, chopped into bite-sized pieces
  • 2 cups chicken broth or water
  • 2 heirloom tomatoes, chopped
  • 1 ½ cups feta cheese stuffed olives, sliced in half
  • ½ cup capers
  • 1 yellow squash, chopped
  • 1 red onion, diced
  • Juice of ½ lemon, zest of one whole lemon
  • 2 tablespoons olive oil
  • 1 tablespoon herbes de Provence seasoning
  • Fresh chopped parsley for garnish
  • 1 cup orzo pasta (uncooked)

Instructions:



  1. Add all of the ingredients except the orzo and parsley into the Instant Pot and combine. Secure the lid on the Instant Pot and make sure the pressure valve is sealed. Cook on the high pressure setting for 8 minutes, then carefully release the pressure valve.
  2. Once the pressure has finished releasing, remove the lid and add in the uncooked orzo pasta. Secure the lid and pressure valve once more. Cook on the low pressure setting for 3 minutes, then release the pressure. Cool with the lid off for 10 minutes before serving.
  3. Garnish with chopped parsley and a drizzle of olive oil. Serve and enjoy immediately!

  • 1 pound chicken breasts, thawed
  • 1 egg
  • ¼ teaspoon water
  • ½ cup Japanese panko bread crumbs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • ¼ teaspoon sea salt
  • ¼ cup mozzarella cheese

“Pizza” Crusted Chicken Nuggets With Mozzarella & Basil - Beck & Bulow

Instructions:



  1. Preheat the oven to 400 degrees Fahrenheit. Prepare a baking sheet, lightly greased or lined with parchment paper if desired. Set aside.
  2. In a medium mixing bowl, combine the panko breadcrumbs, Italian seasoning, garlic powder, oregano, sea salt and mozzarella cheese. Set aside.
  3. In a smaller bowl, lightly whisk the egg and ¼ teaspoon of water together.
  4. Gently pat the chicken breast dry with paper towels. Cut into bite sized chunks.
  5. Working in batches, coat the chicken bites thoroughly in the lightly whisked egg. Then, dredge in the spice mixture and coat evenly on all sides. Place on the reserved baking sheet.
  6. Bake in the preheated oven for approximately 25-30 minutes, flipping once halfway through. The chicken nuggets should be golden, crispy and cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  7. When finished cooking, remove from the oven and let the chicken nuggets rest for about five minutes. Enjoy immediately with marinara sauce or any other dipping sauce you prefer.

  • 1 tablespoon avocado oil
  • 4 chicken thighs
  • Sea salt & freshly ground black pepper
  • ½ teaspoon green chile powder (or whatever chile powder you have)
  • 2 avocados, cut in half
  • ¼ teaspoon coconut sugar
  • 2 red onions, peeled and sliced
  • 4 green onions, sliced
  • 1 green bell pepper, sliced
  • 3 tablespoons lime juice
  • 1 tablespoon Bragg’s Liquid Aminos
  • Chopped cilantro and lime wedges for garnish
  • Red pepper flakes

Instructions:



  1. Set the chicken thighs out at room temperature for about 20 minutes. This will help them to cook more evenly.
  2. Preheat the oven to 450 degrees Fahrenheit.
  3. Heat the avocado oil in a cast iron skillet over medium-high heat.
  4. Season the chicken thighs with sea salt, freshly ground black pepper and green chile powder on all sides.
  5. When the oil is hot, add the chicken thighs to the pan and cook for 12 minutes, then flip and cook for another 10 minutes.
  6. Wipe out the skillet. Sprinkle the coconut sugar on top of the avocado halves, then place them in the hot pan facing down. Cook for about 2 minutes. Remove from the pan and set aside.
  7. Adding more oil to the pan if necessary, cook the red onions for approximately 3 minutes. Add in the green onions and bell pepper. Cook for another few minutes. Add in the lime juice and Bragg’s Liquid Aminos. Stir to combine.
  8. Place the chicken thighs and avocados back into the skillet. Bake in the oven for about 7 minutes or until the chicken is cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  9. Season with more sea salt and freshly ground black pepper if desired. Garnish with cilantro and limes. Serve and enjoy!

  • 2 packages of chicken thighs
  • ⅓ cup fish sauce, divided
  • 3 stalks lemongrass, minced & divided
  • 2 tablespoons avocado oil
  • ⅓ cup coconut sugar
  • 1 whole head of garlic, minced & divided
  • 4 Thai chilis, minced, or 4 teaspoons red pepper flakes
  • 2 teaspoons sea salt, plus extra
  • Freshly ground black pepper
  • ¾ cup coconut water
  • Cooked jasmine rice for serving

Vietnamese Chicken Thighs With Caramelized Coconut Sugar - Beck & Bulow

Instructions:



  1. Thaw the chicken thighs overnight in the refrigerator. Remove from packaging and pat gently dry with paper towels.
  2. Place the chicken thighs in a mixing bowl. Add in 3 tablespoons of fish sauce, 3 tablespoons of minced lemongrass, all of the avocado oil, 2 tablespoons coconut sugar, 2 tablespoons of the minced garlic, 2 teaspoons of sea salt, and half of the minced Thai chili or red pepper flakes. Season with freshly ground black pepper and combine thoroughly. Marinate the chicken at room temperature, covered, for at least 15 minutes and up to one hour.
  3. Place a large dutch oven over medium heat. Sear the marinated chicken thighs for approximately 4-5 minutes, skin side down first. Work in batches if necessary. Transfer the seared chicken thighs to a plate. The chicken will not be fully cooked at this point, only seared. Pour any residual liquid out of the dutch oven and discard.
  4. Put the emptied dutch oven back over medium heat. Add in 2 tablespoons of coconut sugar and spread into a thin, even layer on the bottom of the pot. Let the sugar caramelize, undisturbed, for approximately 5-8 minutes.
  5. When the coconut sugar is caramelized completely, add in the rest of the minced garlic, lemongrass and Thai chilis or red pepper flakes. Stir to combine for approximately 30 seconds.
  6. Add the coconut water to the dutch oven, along with the remaining coconut sugar and fish sauce. Place the seared chicken thighs in the dutch oven. Use tongs to flip the thighs a couple times, making sure they’re coated evenly. Place them with the skin side facing up.
  7. Reduce the heat and bring to a simmer. Cover the dutch oven halfway with the lid. Cook for approximately 20-25 minutes, until the chicken is cooked all the way through. Chicken should always be cooked to an internal temperature of 165 degrees Fahrenheit.
  8. Serve the chicken thighs over freshly cooked jasmine rice. Spoon braising liquid over the top. Extra sauce can be served on the side for dipping.
