We’ve carefully tested the best combinations of our delicious ground meat selections to create a burger with the ultimate flavor and juiciness that will give you the utmost satisfaction. Pasture Raised Bison & Fully Wild Boar

The key to really customize your burgers and bring out their best flavor potential is to combine two types of ground meat. Our favorite combination is bison and wild boar. Why? Well, the flavors complement each other perfectly (let’s be real though- any of our ground meats taste great together) and the wild boar has a little more fat than the bison to create a perfectly juicy patty. The combination is tender, flavorful and absolutely mouthwatering.

Now let’s discuss the toppings. We’re fans of cheese on our burgers, and had a great time testing out all of the fine cheeses we stock in the shop. Choose your favorite - you can’t go wrong. Some really great cheese is essential to create the cheeseburger of your dreams. Melty, gooey cheese is always irresistible and we all know that this is one of the most important aspects of a really satisfying burger.


The next essential topping for this burger is our famous wild boar bacon. Anyone who has tried this bacon knows just how addictively tasty it is. This meaty bacon has more flavor than pork bacon and cooks up to be perfectly crispy on the edges. Not to mention, wild boar is one of the most sustainable meats you can eat. Although your burger will still be delicious without any wild boar bacon on top, we cannot stress enough how much it will add to the experience.

A Farm Fresh Egg With A Runny Yolk

And last but not least, a farm fresh egg, cooked to perfection with a slightly runny yolk. Of course, the doneness of the egg will depend on your personal preference. But we’ve determined that for eating burgers, a slightly runny yolk is best. You still get the pleasure of biting into the egg and having the yolk run out, but without being too liquidy and messy.

This creates a flavor and texture sensation that really brings your burger to the next level. The flavor of a free range, farm fresh egg simply cannot be beat. If you’re familiar with the differences between store bought eggs and farm fresh eggs, you’ll know that the real deal has a characteristic deep golden yellow yolk. The eggs at our shop are from De Smet Dairy at Bosque Farms and are without a doubt the best eggs we’ve ever had.

Ingredients:

  • 1 pound ground bison
  • 1 pound ground wild boar or ground elk
  • Cheese of choice, sliced
  • 12 slices wild boar bacon, cooked
  • 12 eggs
  • 12 brioche buns
  • Lettuce, tomato, onion, pickles, mayonnaise, mustard, ketchup and any other condiments you like

Instructions:

  1. Combine the ground bison with the ground wild boar and make 12 patties.
  2. Cook the burgers either on the grill or the stove top. If cooking on the stove, use some bison tallow or other oil to grease the skillet. Cook over medium-high heat for 3-5 minutes per side on the grill and 2-4 minutes on the stovetop, depending on the thickness of your burgers. Add the slices of cheese during the last two minutes of cooking so that it melts on top of the burgers. You can close the cover on the grill or put a lid over the pan to encourage the cheese to melt. Set the cooked burgers aside to rest.
  3. Fry the eggs on the stovetop to your preferred level of doneness. Carefully set an egg on top of each burger.
  4. Toast the brioche buns, either under the broiler or on the grill.
  5. Remove the buns from the heat and assemble your burgers. Enjoy!
