One of my all-time favorite springtime dinners is oven baked salmon. It’s great for any season, but I love the freshness and lightness of salmon as the weather begins to change. It’s easy and quick to prepare, and always yields a delicious result. The great thing about good quality salmon is that it doesn’t need much - the flavor of the fish is enough on its own and whatever you adorn it with will just add to something that’s already amazing. This recipe is my favorite salmon marinade, but if you’re missing any of the ingredients feel free to make substitutions or leave them out entirely. Just lemon juice (or slices placed on top of the fish while baking), salt, pepper and a generous drizzle of oil is enough for a tasty salmon dinner.

That being said, I love the fresh savory flavors of thyme and rosemary with salmon. Maple syrup and Bragg’s liquid aminos add the perfect dose of sweet and salty - you can easily substitute other sweeteners, like brown sugar or honey, or regular soy sauce instead of the Bragg’s. Coconut aminos would also be a great option since it’s sweet and salty all on its own. Ghee is my favorite cooking oil for salmon - it’s got an amazing, rich buttery flavor and a high smoke point. If you’re unfamiliar with ghee, it’s simply clarified butter, great for cooking and easier to digest for those sensitive to dairy. We offer delicious ghee made from our European style pasture raised butter. If you don’t want to use ghee, you can absolutely use olive oil, avocado oil or whatever you have on hand. This recipe calls for sockeye salmon which typically are smaller fillets compared with other salmon varieties like king or coho. If you’re cooking a larger piece of fish, you may need to adjust the cooking time. Salmon is finished cooking when it flakes easily with a fork, and will dry out if overcooked. For this reason I always like to check salmon early to prevent overcooking. You can always cook it longer but can never undo excess time in the oven! You can also finish this under the broiler for a minute or two which will create a great texture on the top of the fish. No need to flip the salmon while cooking, and make sure the fish is placed with the skin side facing down on the baking sheet. Ingredients:


  1. Approximately 1.5 lb wild caught Alaskan sockeye salmon fillet, available for online seafood delivery from Beck & Bulow
  2. One clove of garlic, minced
  3. One tablespoon dark maple syrup
  4. One tablespoon Braggs liquid aminos
  5. Zest and juice of half a lemon
  6. 1 tablespoon minced parsley
  7. 1 tablespoon minced thyme
  8. 1 tablespoon minced rosemary
  9. ¼ cup melted Artisanal Grass Fed Ghee from Beck & Bulow
  10. Sea salt and freshly ground black pepper

Instructions:

  1. Marinate the salmon. Combine the melted ghee with all other ingredients. Season with sea salt and freshly ground black pepper to taste. Place the salmon in a shallow dish and cover completely with the marinade. Let the salmon soak in all the flavors for about 45 minutes prior to cooking.
  2. Preheat the oven to 350 degrees. Let the fish reach room temperature before cooking if it hasn’t already.
  3. Bake in the oven for approximately 12 minutes. Cooking time may vary depending on the thickness of the fillet, so check the salmon early to avoid overcooking. The salmon should flake easily with a fork when it’s ready to come out of the oven.
  4. If you like, you can finish the salmon under the broiler for 1-2 minutes. Serve and enjoy!
