This simple, hearty breakfast is perfect and delicious fuel for your day.

Ingredients:

(Serves 4)

  • 8 strips of wild boar bacon, roughly chopped
  • 6 cups potatoes, diced small (sub frozen hashbrowns if desired)
  • ½ cup onion, chopped
  • Sea salt and black pepper to taste
  • ¼ cup water
  • Minced garlic to taste
  • 4 large local eggs
  • 1 cup shredded cheese of choice
  • 2 tablespoons green onions, sliced

Instructions:

  1. Fry the bacon in a large skillet. Set aside on a plate.
  2. Add the onions and potato to the bacon fat in the skillet. Add the ¼ cup water and cover. Simmer for about 15 minutes, flipping minimally to allow potatoes to brown. Add the minced garlic, stir and let cook for about a minute. Season with salt and pepper to taste.
  3. Hollow out four spaces in the skillet to crack the eggs into. Cover and cook on low heat for about ten minutes. Sprinkle cheese and bacon on top and continue to cook just until the cheese is melted. Garnish with chopped green onions if desired, and serve.

This scrumptious breakfast sandwich puts a primal, slightly sweet spin on the traditional classic.

Ingredients:

(Serves 4)

  • 12 slices boar bacon
  • 2 tablespoons 100% pure maple syrup
  • 6 tablespoons of pasture raised butter, softened
  • 4 large eggs
  • 8 slices of pasture raised cheddar cheese
  • Eight slices of slow-fermented sourdough bread

Instructions:

  1. Cook the bacon in a frying pan. A couple minutes before it becomes crispy, add the maple syrup to the pan. Finish and transfer to a plate.
  2. Fry the eggs in bacon fat. Set aside.
  3. Layer four slices of bread with a slice of cheese, three slices of bacon, one fried egg and another slice of cheese. Top with the remaining slices of bread.
