1. Bison New York Strip
You really can’t go wrong with a juicy buffalo strip steak. These steaks have a luscious fat-cap on one side, making them super flavorful. This tender cut comes from the same primal as filet mignon. For those unfamiliar with meat industry lingo, the primals are the large sections that the buffalo are initially divided into by our expert butchers.
Hand cut and masterfully trimmed, Beck & Bulow strip steaks are gorgeous to look at. While not quite as tender as the most expensive cuts, this high quality steak is succulent and delicious. 2. Wild Boar Tenderloin

Our wild boars roam truly wild and free. They forage their natural diet of nuts, berries, roots and tubers which gives their meat a nutty and delicious flavor.
These animals are humanely trapped and travel to our facility under the supervision of highly specialized veterinarians to ensure that they experience as little stress as possible. The most choice cut of the entire boar, this luscious tenderloin will be sure to delight. Take care not to overcook this naturally lean meat. Simply season with salt and pepper and pan sear at high heat until it reaches an internal temperature of 140-145 degrees.
3. Elk Medallions
If your family has never had elk, they’re about to be converted for life. And if they’re already familiar with this tender, flavorful meat, everyone will truly appreciate these incredible elk medallions. Our elk, or wapiti as some refer to them, roam essentially wild on 20,000-100,000 acre ranches in the Rocky Mountains. The tenderloin of the elk, these steaks will melt in your mouth.
The fragrant and juicy magic of our elk medallions shines with an uncomplicated preparation. Sea salt and fresh ground pepper are all you need, typical of our top-shelf cuts. The rich flavors of the elk can truly stand on their own. Again, you want to cook these medallions to rare or medium rare, or until an internal temperature of 120 degrees is reached.

Also known as filet mignon - you had to be expecting this one to be in our top five. Known as the queen of steaks, this sumptuous cut is a perfect way to honor America the Beautiful. When you buy steaks online from us, if these filets are in stock be sure to grab them up because they sell out very quickly. Our loyal fans buy them regularly and they are a true delicacy - this bison is such high quality that it can be eaten tartare (raw). These filets should always be cooked rare to medium rare. Anything higher than that would be a disservice to this incredible meat.
5. Bison Tomahawk
If the filet is the queen of steaks, this bison tomahawk is the absolute king of kings. This is the ultimate steak for celebrating anything. Prized for their tenderness and fat marbling, these giant bone-in buffalo ribeye steaks have a serious wow factor. Weighing in at 30-40 oz each, don’t be intimidated by their impressive size. They’re incredible when cooked the same as any of our smaller ribeyes, just adjust the time to account for their size. Best when seared rare to medium rare, as with all bison.
