Duck bacon is much lower in fat than conventional pork bacon, and it has amazing flavor and succulent texture. This sandwich is great for breakfast or lunch and will leave you feeling oh so satisfied. And if wild boar bacon is what you have on hand rather than duck, it would certainly be a scrumptious substitute.

Curate The Best Ingredients For Amazing Sandwiches

The key to a really delicious sandwich is for every ingredient to be of the best quality possible. We’ve already got the bacon taken care of for you, but I can’t stress enough the importance of really good bread. My personal favorite is locally baked sourdough - nothing compares to the flavor and fluffy texture of slow fermented, freshly baked bread. It’s the difference between a really good sandwich and a memorably drool worthy sandwich. Don’t stop there with the premium ingredients, though. Get heirloom tomatoes from the farmers market, if the season permits. Good quality mayonnaise is extremely important, too. The flavor of lower quality mayo just can’t compete. Homemade is even better, if time permits.

If you’d like to add a probiotic boost, sauerkraut adds tangy flavor and tons of health benefits. It’s one of those things where you’re either into the flavor, or you’re not. If you like kimchi, that could be a great addition as well. Or leave it off entirely. The one thing I certainly do not recommend leaving off is the bread and butter pickles. These sweet, tangy pickles are so perfect paired with the bacon, that it would be a shame to omit them from the recipe. You could substitute sliced cornichons (or served on the side as a garnish) for a similar flavor. Further customize your sandwich by mixing some sriracha into the mayonnaise if you like a little bit of kick.

Duck bacon is actually meat cut from the breast of the duck where there is a large amount of fat. Nonetheless, it’s incredibly similar in texture and flavor to more familiar varieties of bacon. Our ducks are raised in quiet, spacious barns on a small group of farms in rural Indiana. They are often raised by Mennonite or Amish farmers, and are lovingly cared for on family farms. They are White Perks ducks, bred for their tender, mild flavored meat that is preferred by most people with an Americanized palette. This duck meat easily adapts to a wide range of flavor profiles and cuisines.

(Serves 4)

  • 8 slices good quality fresh sourdough bread, toasted
  • 12 slices duck bacon, cooked
  • ½ large avocado, sliced thin
  • 16 bread & butter pickles
  • ½ large heirloom tomato, sliced thin
  • Lettuce or fresh spinach for serving
  • Good quality mayonnaise (mix in a little sriracha if desired)
  • Sauerkraut if desired
  • Sea salt and freshly ground black pepper to taste

  1. Toast the bread and set aside.
  2. Mix some sriracha into the mayonnaise if desired in a small dish. Spread evenly on all slices of bread.
  3. Cut the slices of duck bacon in half, if necessary to fit. Arrange evenly on each sandwich (four sandwiches total). Top with lettuce or spinach, tomato slices, and avocado. Add bread and butter pickles on top. Season to taste with sea salt and freshly ground black pepper. Add sauerkraut on top if desired.
  4. Serve and enjoy immediately.
