The most tender cut on the animal. Leaner than beef, faster to cook, harder to forget.
2x Wagyu Beef New York Strip (12–14 oz)
Heavily marbled American Wagyu. Pull it at medium-rare and the fat does the rest.
1x Elk Medallions (1 lb)
Cut from the teres major — the most tender muscle on the elk. Cooks in 8 minutes. Tastes like nothing else in the box.
1x Beck & Bulow Signature Spice Rub (16oz)
Kosher salt, garlic, black pepper, pure cane sugar, parsley, cayenne. Our house blend. Built for game meat and high-fat beef. Works on everything in this box.
1x Flor de Sal Portuguese Sea Salt (5 oz)
Finishing salt, not table salt. Coarse flake crystals — added the moment it comes off the heat, not before.
1x Gourmet Digital Probe Thermometer

Flash-frozen at peak freshness. Flash-frozen actually beats "fresh" sitting on ice for days in transit — it locks in the texture and flavor at their absolute prime.
At 0°F or below, this stays at peak quality for 12–18 months. For best flavor and texture, we recommend cooking within 6 months.
We recommend thawing first for the most even cook. Move it from freezer to fridge 24 hours ahead, or quick-thaw in cold water (in the original packaging) if you're short on time.
