Ingredients:

(Serves 3-4)

  • 1.5 packages of elk medallions - the best quality meat you can buy
  • 2 teaspoons sunflower or avocado oil
  • Sea salt and black pepper
  • 2 tablespoons bison tallow

Instructions:


  1. Brush or coat both sides of the medallions with the oil and season generously with salt and pepper.
  2. Place a cast iron skillet over medium heat and add the bison tallow. When the tallow is hot, add the medallions and brown on each side 3-4 minutes or until meat reaches an internal temperature of 120 degrees. Set aside loosely covered and rest for 10 minutes before slicing/serving.
