Everything ships frozen with dry ice and arrives ready to go straight into your freezer. Thaw cuts individually as you need them. Vacuum-sealed cuts hold well frozen for 6–12 months.

Flash-frozen at peak freshness. Flash-frozen actually beats "fresh" sitting on ice for days in transit — it locks in the texture and flavor at their absolute prime.
At 0°F or below, this stays at peak quality for 12–18 months. For best flavor and texture, we recommend cooking within 6 months.
We recommend thawing first for the most even cook. Move it from freezer to fridge 24 hours ahead, or quick-thaw in cold water (in the original packaging) if you're short on time.
