Cooking: With their natural richness, bison cross cut marrow bones are perfect for roasting or slow cooking. Stand the bones upright on a baking sheet, season lightly with salt, and roast at 425°F for 20–25 minutes until the marrow is soft and bubbling. The cross-cut style makes the marrow easy to scoop and enjoy directly from the bone or use as a luxurious base for sauces, broths, and bone marrow butter. They can also be slow-simmered for rich, collagen-packed bone broth.
