Copycat Chipotle Bowl With Grass-Fed Beef Barbacoa at Home
This is my copycat version of the barbacoa bowl that made a certain fast casual chain a lunchtime staple, made at home with a real chuck roast instead of whatever ends up in a steam table. Smoky, tangy, falling apart tender beef piled over cilantro lime rice with all the usual fixings. It takes longer than a drive-through line, but not by much once the braise is actually going, and it tastes like it took twice as long as it did.

Why Chuck Roast Makes The Best Barbacoa
Barbacoa is traditionally made from tougher cuts that need hours of low heat to break down, and pasture raised beef chuck roast is exactly built for that job. It's economical, holds up beautifully over a long braise, and shreds into exactly the kind of juicy, fall-apart texture you want piled over rice. The chipotle and adobo do most of the flavor work here, but a well raised chuck roast is what gives the dish its actual body.
Ingredients
For the barbacoa (makes about 6 bowls):
- 4 to 5 pounds Pasture Raised Beef Chuck Roast, cut into large chunks
- 3 chipotle chiles in adobo sauce, plus 2 tablespoons of the adobo sauce
- 4 cloves garlic
- ½ cup beef broth
- 3 tablespoons apple cider vinegar
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon ground cloves
- 3 bay leaves
- Juice of 2 limes
- Sea salt, to taste
For the bowls:
- 3 cups cooked white rice, tossed with chopped cilantro and a squeeze of lime
- 2 cups black beans, warmed
- 1 cup corn, charred if possible
- 1 cup pico de gallo
- 1 cup shredded cheese
- Sour cream or Mexican crema
- Guacamole, optional
Instructions
- Blend the chipotle chiles, adobo sauce, garlic, beef broth, vinegar, cumin, oregano, cloves and lime juice until smooth.
- Season the chuck roast generously with sea salt. Place it in a slow cooker or Dutch oven, pour the sauce over the top, and tuck in the bay leaves.
- Cover and cook on low for 8 hours, or until the beef shreds easily with a fork.
- Remove the meat and discard the bay leaves. Shred the beef directly in the pot, tossing it back through the remaining juices so it stays moist.
- While the beef finishes, cook the rice and toss it with chopped cilantro and a squeeze of lime.
- Build each bowl with rice on the bottom, followed by black beans, a generous portion of barbacoa, corn, pico de gallo, cheese, a dollop of sour cream and guacamole if using.
