On the ground and primal blends: Six pounds of straight ground across bison and beef covers your weekly cooking foundation — burgers, breakfast scrambles, quick skillets, whatever your daily rotation looks like. The four pounds of primal blend works the organ nutrition in without requiring a separate preparation. Twenty percent of each pound is heart, liver, and kidney worked into the grind. The flavor is indistinguishable from standard ground in most preparations. The nutrient density is not.

On the ribeyes: Four ribeye steaks across bison and beef. The bison ribeyes are lean and intensely flavored — sear them hard in a cast iron, pull them at medium-rare, rest them properly. The beef ribeyes carry more fat and a deeper, richer finish. Two proteins, two different expressions of what a great ribeye can be. Cook them side by side if you want to understand the difference.

On the tomahawk: The bison tomahawk ribeye is the centerpiece of this box. Thirty to thirty-six ounces of ribeye on a long bone — visually striking, deeply satisfying, and built for high heat. Reverse sear it for the most control — low oven at 250°F until it hits 120°F internal, then finish in a screaming hot cast iron with butter and salt until a dark crust forms. Rest it for ten minutes. Carve it at the table. This is the cut that earns its place on the counter before it ever hits the pan.

On the osso buco: Bison osso buco is the slow cook anchor of this box. Cross-cut shank braised low and slow — six to eight hours at 275°F until the meat pulls from the bone and the marrow in the center has rendered into something extraordinary. Rich in collagen, gelatin, and connective tissue that the carnivore community values deeply for joint health and recovery. This is nose-to-tail eating at its most satisfying.

On the wild boar bacon: Two packs of wild boar bacon cured and smoked in-house. Earthier and richer than standard pork bacon with a fat cap that renders beautifully. The highest-fat item in this box by design — carnivore eating requires dietary fat and wild boar bacon delivers it with flavor that standard bacon can't match.

On the marrow bones: Canoe-cut for easy access to the marrow. Roast them at 450°F for fifteen to twenty minutes until the marrow is soft, glistening, and beginning to bubble at the edges. Season with flaky salt and eat directly from the bone. Rich in collagen, healthy fats, and fat-soluble vitamins. One of the oldest foods humans have eaten and still one of the best.

On the cooking fats: Every box includes one 16oz jar of Bison Tallow and one 16oz jar of Wagyu Beef Tallow — two of the cleanest, most versatile animal-based cooking fats available. Both are rendered pure with no additives and shelf-stable until opened. Use them for searing, roasting, or finishing. Your cast iron will thank you.
