Variable contents: Exact cuts, variety, and quantity will vary order to order based on availability and seasonal inventory. Every bulk order is different — that's the nature of whole animal butchery. The weight ranges above are consistent. The specific cuts within each category will vary.
Ground meat makes up approximately half of every animal by weight. This is the nature of whole animal butchery — not every part of the animal becomes a steak. The ground bison, primal blend, burger patties, and sausages in your order are the same premium free-range bison as every other cut in the box.
Sourcing: Beck & Bulow sources bison from free-range ranches across the American West. All animals are grass-fed, free-range, and never administered antibiotics, steroids, or growth hormones. Our bison are raised in environments that mimic their natural habitat — open plains, room to roam, grazing naturally. The same sourcing standards that apply to every individual bison cut in our catalog apply to every bulk order we fill.

Storage: Make sure you have adequate freezer space before ordering. A standard kitchen refrigerator freezer holds a quarter bison comfortably. A half or whole bison requires a dedicated chest or upright freezer.
