On the bison ribeye: Lean, clean, and deeply flavored. Free-range bison spends its life on open pasture — that life shows up in the meat. On the elk medallions: Cut from the teres major — also known as the petite tender or bistro tender — a small, exceptionally tender muscle from the shoulder that most butchers don't bother with because it takes skill to break down properly. We do. The result is a medallion-style steak with a silky texture and rich, slightly sweet elk flavor that surprises people every time. It sears beautifully and cooks quickly — treat it like a premium beef medallion and don't walk away from the pan. Medium-rare. Hot butter. Done.

On the wild boar: Two cuts, two preparations. The tenderloin is lean and mild — closer to heritage pork than you might expect, with a cleaner, more pronounced flavor. Roast it whole or slice it into medallions and sear it fast. The bacon is cured and smoked in-house — earthier and richer than standard pork bacon, with a fat cap that renders beautifully. Cook it the same way you always cook bacon. It disappears the same way too.

On the venison: Lean, clean, and deeply satisfying. Venison medallions are one of the most underrated cuts in our catalog. Sear them hard in a hot pan with butter and fresh herbs, pull them at medium-rare, and rest them before cutting.
