On our Wagyu: Beck & Bulow sources American Wagyu — the crossbreed of Japanese Wagyu genetics and domestic cattle that delivers exceptional marbling with bold beefy flavor. It renders beautifully in a hot cast iron and the finish lingers in a way that grocery store beef simply doesn't replicate. Salt it well. Get the pan screaming hot. Let it rest.

On our bison ribeye: Leaner than Wagyu, which means it cooks faster and rewards attention. Medium-rare is the move — anything beyond that and you lose what makes bison worth eating. The flavor is clean and pronounced. Rich without being heavy. Once you've had a properly cooked bison ribeye, standard beef ribeye starts to feel like it's missing something.

On the elk medallions: Rich, dark, and slightly sweet — elk has a depth that comes from animals living and moving in mountain terrain. The medallions are cut from the prime loin area, giving you tender, well-marbled portions that sear beautifully and cook quickly. Treat them like a premium beef medallion and they'll exceed every expectation.

On the venison: Lean, clean, and deeply flavored. Venison medallions are one of the most satisfying wild game cuts we carry — sear them hard in a hot pan with butter and fresh herbs, pull them at medium-rare, and rest them properly. The flavor is bold but not gamey when cooked right.

All cuts arrive vacuum-sealed and frozen, packed with dry ice for transit. Thaw in the refrigerator overnight, bring to room temperature before cooking, and season simply. Salt, heat, butter, rest. That's all they need.

At 0°F or below, this stays at peak quality for 12–18 months. For best flavor and texture, we recommend cooking within 6 months.

We recommend thawing first for the most even cook. Move it from freezer to fridge 24 hours ahead, or quick-thaw in cold water (in the original packaging) if you're short on time.
