The tenderloin requires skill to source and butcher properly — ours is hand-cut from whole loins and trimmed to order. This is simplicity at its highest level.

The tenderloin's inherent tenderness means your focus is on temperature and rest, not technique. Pat the filet dry and season lightly with salt and pepper — this cut's delicate flavor speaks for itself. Sear briefly in a screaming hot cast iron or grill, 1.5-2 minutes per side, creating a caramelized crust while keeping the center rare to medium-rare (125-135°F).
