Physical Description: Approximately 3-4 lbs of Bison Osso Buco. Also known as the bison leg shank, a Beck & Bulow favorite! We love the bone marrow in the bones for flavor and health benefits. The bone marrow can be scooped out with a spoon while the rest of the meat will just fall off the bone.
Cooking: Slow cook this cut. As long as you have the osso buco covered in liquid you can’t mess it up. The crockpot is ideal. Put the meat in the crockpot and cook on low for 4-6hrs. To speed up the process use and Instapot or pressure cooker. It can be done in 90 min.
