Wagyu Beef Tenderloin Filet
Physical Description: Choose your grading of Approximately 6-8 oz of incredibly high quality beef tenderloin. Also known as the filet mignon, this is the most tender and sought after steak.
Cooking: For this premium steak, all we recommend is lightly oiling, adding a pinch of salt and pepper all over and quickly searing each side over high heat. Cook the center to 125-145 degrees Fahrenheit for a rare to medium steak. Allow to rest for 3-5 minutes and then dig in!

Farming Practices: We offer a variety of wagyu to our customers. Our New Mexico Wagyu comes from our partner ranch just South of Santa Fe. One of the things they do is combine the Tajima strain (a Black Wagyu acclaimed for intense marbling) with Shimane or Fujiyoshi strains (also Black Wagyu known for their large size.) This creates a perfect animal that’s strong, healthy, and (most importantly) highly marbled – and 100% purebred wagyu. The Silver, Gold & Mishima Wagyu are raised healthily and stress free on a large Ranch in Texas. These animals are always at least 50% wagyu, are never administered hormones or antibiotic, and are humanely treated. Most American Wagyu, also known as are a cross between full blood Japanese Wagyu and either Red or Black American Angus or Charolais.
