Farming Practices: Our American Wagyu beef (Angus and a quarter Wagyu) is raised free range on the 10,000 acre Koldyke ranch in Las Vegas, New Mexico. 5,000 acres of the ranch is partnered with the national wildlife preserve. The Gallinas River runs through a beautiful valley, and the ranch is rich with trees and vegetation. The land is managed sustainably, preventing overgrazing and nurturing soil health. There are an abundance of wild animals including elk, deer, cougars and coyotes. True to the traditional methods of raising Wagyu, we provide high quality barley grains for the cows to eat as they please. We raise bison on this land as well.
Butchering Philosophy: Our beef is butchered by an amazing community of Amish farmers in Colorado. These farmers have known each other their whole lives and put the highest level of care towards each and every animal. Five people work on one animal at a time.
