On the bison ribeye and New York strip: Two of our most reordered cuts. The ribeye is rich and deeply flavored — sear it hard in a cast iron, pull it at medium-rare, rest it properly. The New York strip is leaner with a firmer bite and bold bison flavor that holds up beautifully to simple seasoning. Cook them both on the same night and you'll understand why bison is what this company was built on.

On the elk medallions: Four medallion steaks cut from the prime loin area. Rich, slightly sweet, and surprisingly approachable for a first-time wild game cook. Treat them exactly like a premium beef medallion — hot pan, butter, medium-rare, rest before cutting. They cook fast. Don't walk away.

On the elk and beef ground: Two versatile everyday proteins that cover your weekly rotation. The elk ground is lean and distinctly flavored — use it anywhere you'd use ground beef and the result is cleaner, bolder, and more interesting. The pasture-raised beef ground is the familiar foundation — burgers, bolognese, tacos, chili. Both are additive-free, sourced to our standards, and ready for whatever you're building.

On the wild boar bacon: Cured and smoked in-house. Earthier and richer than standard pork bacon with a fat cap that renders beautifully. Cook it the same way you always cook bacon. It disappears the same way too — just faster.

On the Coho salmon: Two 8oz fillets of Wild Alaskan Coho salmon — firm, clean, and deeply flavored. Pan-sear skin-side down in a hot skillet until the skin is crisp, flip once, pull it while the center still has give. Four to five minutes total. It's one of the easiest proteins in this box and one of the most impressive to serve.
