These authentic southern style collard greens are one of my favorite ways to eat my vegetables. The tender greens cooked in flavorful bison bone broth are the perfect match for our delicious wild boar bacon, a favorite for its complex and delicious flavor. Whether you choose to use our best selling wild boar bacon or our new applewood smoked duck bacon this is going to be a side that you make again and again. Classic Southern Collard Greens With Wild Boar Bacon - Beck & Bulow

Ingredients:

  • 2 pounds collard greens
  • 6-8 slices of wild boar bacon
  • 1 large sweet vidalia onion, chopped
  • 5 cups bison bone broth
  • 1 cup sun dried tomatoes, chopped
  • 4 cloves garlic, finely minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon crushed red pepper flakes

Instructions:

  1. Chop the collard greens, removing and discarding any particularly thick stems. Set aside.
  2. In a Dutch oven or a thick bottomed pot, sauté the chopped bacon. After 2-3 minutes, add in the chopped vidalia onion. Cook until the onion is softened and fragrant and the bacon is cooked through and crispy. Add the chopped collard greens to the pot. Cook, stirring occasionally, until the greens are just wilted.
  3. Pour the bone broth into the pot. Add in the sun dried tomatoes, minced garlic, sea salt and red pepper. Stir to combine.
  4. Bring the pot to a boil, then reduce heat, cover and simmer. Cook for approximately 45 minutes or until the collard greens are tender. Serve immediately and enjoy.
