100% Pasture Raised New Mexican Pork
Physical Description: Each pack comes filled with approximately 8-10 oz (.5-.625 lbs) heritage pork spare ribs. Cut from the bottom section of the ribs and breastbone, just above the belly. Spare ribs can be prepared similar to back ribs and are more meaty and succulent than back ribs. The phrase spareribs actually comes from a German phrase Rippenspeer which actually translates to “spear ribs,” as this cut was traditionally roasted on a spit or spear.
Nutritional Information: A Source of Key Nutrients:Pork is an excellent source of protein and provides several important vitamins and minerals. A 3-ounce serving of pork is an “excellent” source of thiamin, selenium, protein, niacin, vitamin B-6 and phosphorus, and a good source of zinc, riboflavin and potassium. Heart-Healthy: Pork is naturally low in sodium and an “excellent” source of potassium – two nutrients that, together, can help regulate blood pressure.

Spare ribs can be cooked at a low temperature in the oven until tender, then use the broiler to add a nice finish.
Farming Practices: Our pigs are raised on a small farm on the edge of the Rio Grande river in Northern New Mexico. Each animal has approximately a half acre of land where they are free-range and have daily human interaction (which includes regular treats such as apples). USDA Certified, grain fed, their diet has consisted mainly of crude protein, crude fiber, and plant fiber. All of our pigs are hormone free and have been raised in a stress free environment.
