100% Pasture Raised New Mexican Pork
Physical Description: Each pack comes filled with approximately 1 lb of ground mild Italian pork sausage.
Nutritional Information: A Source of Key Nutrients: Pork is an excellent source of protein and provides several important vitamins and minerals. A 3-ounce serving of pork is an “excellent” source of thiamin, selenium, protein, niacin, vitamin B-6 and phosphorus, and a good source of zinc, riboflavin and potassium. Heart-Healthy: Pork is naturally low in sodium and an “excellent” source of potassium – two nutrients that, together, can help regulate blood pressure.
Cooking: Italian sausage can be added into dozens of delicious recipes, such as sausage and peppers, sausage and pasta, or sausage hoagies with generous portions of caramelized onion. A crowd favorite is Minestrone soup with Italian sausage. Italian sausage needs to be cooked to 160°F as it is a raw ground pork product. Cooking sausage too high, too fast and unevenly can cause the meat to be too dark on the outside and still raw at the center. Gradually bringing the meat to heat, and turn for even browning for perfect sausage.
Farming Practices: Our pigs are raised on a small farm on the edge of the Rio Grande river in Northern New Mexico. Each animal has approximately a half acre of land where they are free-range and have daily human interaction (which includes regular treats such as apples). USDA Certified, grain fed, their diet has consisted mainly of crude protein, crude fiber, and plant fiber. All of our pigs are hormone free and have been raised in a stress free environment.
