Ingredients:

  • ¼ cup avocado oil or bison tallow
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • ½ cup finely chopped celery
  • 1 pound of ground elk
  • One 6 ounce can of organic tomato paste
  • ¾ cup water
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon cumin powder
  • ¼ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup of white rice, uncooked
  • 6 medium bell peppers of any color

Instructions:
  1. In a large cast iron skillet, heat the avocado oil or bison tallow over medium high heat. Add the chopped onion, garlic and celery. Cook until soft and fragrant, about 3 minutes. Add the ground elk meat to the pan and cook until lightly browned.
  2. Mix the can of tomato paste with the ¾ cup water and mix thoroughly. Add the tomato sauce to the meat and combine.
  3. Add the rosemary, cumin salt and pepper. Mix thoroughly and simmer for about five minutes. If desired, add more seasoning after taste testing.
  4. Add the dry rice. Continue to simmer until there is little to no liquid left in the pan. This step should take about 10-15 minutes. Meanwhile, heat the oven to 350 degrees Fahrenheit.
  5. While the rice and elk meat mixture is cooking, prepare the bell peppers. Slice off the end with the stem on each pepper, but make sure to set the tops aside. Clean out the insides by removing the seeds and any inner portions. If necessary, you can rinse them out with water.
  6. Fill each pepper with the meat and rice mixture. Keep in mind that the filling will expand as the rice continues to cook in the oven, so leave a little extra space. Put the tops back on the peppers.
  7. Put the prepared peppers into a baking dish and add about ½ inch of water, which will allow the rice to stay moist and cook. Bake for about an hour. Every fifteen minutes or so, take the peppers out and spoon the liquid over them to ensure that there’s enough moisture for proper cooking of the rice to occur. Add a bit more water if necessary midway through.
