Funnily enough, if you had told me just a few years ago that I’d be working at a butcher shop (and loving it!) I would have been completely shocked. I used to be vegan and I am so grateful to have realized all the benefits there are to raising and eating quality meat. I’ve never felt better, and I’ve never had a job that I’ve loved more.

As someone who used to not know a whole lot about meat, it’s been a learning journey for me to work for a quality meat company. From our butcher shop to our premium meat delivery available online or by phone, it’s a really special place to work. Here’s a few of the things I’ve learned during my time so far at Beck & Bulow.

If there’s one thing that stands out to me from my time working at a butcher shop, it’s that people are thrilled to finally find a great source for meat that tastes amazing and is responsibly sourced. So many customers exclaim things like, “this place is a gold mine!” when they realize all the treasures that are to be found in our selections.

People like to feed themselves and their families well and meat can be really tricky to purchase when you don’t have a trusted source. The fact that we offer a huge variety of meats and a nose to tail selection of cuts also leaves a big impression. Being able to help someone find a cut they’ve been searching for to make a traditional family recipe can really make their day and ours, too.

2. That Frozen Can Often Be The Freshest & Most Convenient Option


The fresh case is definitely a focal point of the shop, and each day our butcher fills it with incredible fresh cut steaks, handmade sausages and other specialty items. However, it never fails to amaze me how many people prefer our flash frozen and vacuum sealed meat selections. We’ve got our frozen selections down to a science - it used to be all that we offered and there’s a good reason for that.

When meat is flash frozen, it’s preserved at the peak of freshness - hence why frozen can actually be freshest. Particularly when it comes to our seafood, which is wild caught in Alaska, filleted on the boat and flash frozen right on the dock in next to no time after it’s caught. 3. That I Love Eating (And Cooking) Meat More Than I Ever Could Have Imagined

Working at Beck & Bulow has shown me just how much variety is possible when it comes to eating meat. I think so many of us get stuck in ruts when it comes to cooking and make the same things over and over again. Our wide selection of quality meats has led me to experiment more with cooking than I ever have before.

Personally, bison is my favorite thing to eat but I love mixing it up and making all sorts of delicious things with the amazing items that we carry. Wild boar has become a particular favorite of mine to cook with. It has a rich, dynamic flavor that adds so much to any recipe. The nutty, sweet taste of this 100% wild meat comes from the nuts, roots and berries that the boar forage for as their food.

There are so many other wonderful things about working in the shop, I could go on and on. From watching our third generation butcher craft handmade items to seeing families come in and shop for everything from weeknight dinners to weddings, there is so much richness and realness to what we do.
